This is one of our dinners again! I film many of dishes I cook for my family. This spicy Sichuan broad bean paste fish is a tradition in my family when I grew up in China, My Gradma aways make this, especially this is a must have during Chinese spring festival.
Ingredients:
Fish marinate
4-5 slices of ginger
4 tbsp Chinese cooking wine(or Sherry)
1 tsp Salt
460g(1lb) whole fish ( Red Snapper)
4 cloves chopped garlic
2 chopped pickled peppers
2 chopped green onions
2 tbsp chopped ginger
1 tbsp Sichuan peppercorn
3 tbsp Sichuan broad bean paste
1 cup water
Pinch of sugar (optional)
1/2 tbsp Corn or bean starch + 3 tbsp water mix well
2 tbsp Chinese Vinegar
1/2 tbsp Mushroom Powder

@@CookingBomb Very helpful - thank you! This recipe was amazing and so flavorful!! I have two new New Years resolutions as of today. First, is to start my own Chinese pickle brine that will have a 2022 birthday (problem is who will babysit it if I have to deploy?? 😐...I'm a soldier...we'll see about that, going to start it anyway) Second, keep up my Chinese cooking/learning and convert my Irish eyes, into Chinese measuring eyeballs, practice makes perfect!

@@user-nw4cl3lv2f Thank you for your kind words! Ireland is beautiful and the people so lovely and gracious. Ii still have family there. My Mom is Irish and my Dad is half Irish, so I'm almost 80% Irish, with the rest a mixture - but was born in the US. I definitely will keep cooking. I mostly only eat Chinese, Thai, Korean, Japanese or Indian food these days. I love all the flavors and their food cultures so much!!

I’m around the same age as Vivian so definitely older than the pickle brine! My circus is just one kid lol. And I also measure using eyeballs only, mine are Australian eyeballs though 😃

Happy Holidays Vivian & the Circus!! Great vid and your fish looked delicious. Those eyeballs are excellent an measuring device. I averaged it to be 1/2 or 1 teaspoon! Thx for your incredible ease in preparing meals!

Actually i ate that red fish dish a lot growing during 10s. As you assume ingredients are totally different but the result such as fish kinds and when plating same. In Korean way using a lot hot pepper paste, flakes, garlic, onion and same soy sauce. Whenever my mother served i loved so much alone eating it with rice. I can make that far as yet.

I never measure either I always put ingredients on my own experience, mostly every woman in my country do the same, my mom teach me to make food that way she always told me to go on your own .. We have lot of spices too so having your own eye ball experience is better , I'm actually from India...
