How to make Japanese gyoza dumplings (potstickers) - 餃子(ぎょうざ) - COOKING WITH CHEF DAI RECIPE
This Japanese Gyoza recipe is a traditional, authentic recipe. Very juicy on the inside with a perfectly crispy toasted base. These are honestly one of my all time favourite Japanese dishes, especially when served with a bowl of ramen and an ice cold beer.
The main differences between Japanese-style gyōza and Chinese-style jiaozi are the rich garlic flavor, which is less noticeable in the Chinese version, and that gyōza wrappers appear to be consistently thinner.
This is a great dish to be enjoyed by the entire family. Simply serve with some steamed rice and side vegetables.

Prep Time: 30 mins
Cook Time: 10 mins
Serves: 45 pieces (around 4 portions depending on your appetite)
Ingredients
Filling:
1.1 lb ground minced pork (= 500 g)
4 leaves cabbage (=150 - 200g)
4 spring onions/green onions (=30 g)
2 large cloves of garlic (grated)
2 inches of ginger (fresh and finely grated)
2 tsp sake (optional)
2 tsp sesame oil
2 tsp soy sauce
1/2 tsp salt
Freshly ground black pepper (to taste)
Dipping Sauce:
0.6 Tbsp soy sauce
0.4 Tbsp rice vinegar (other vinegar)
la-yu (Japanese chilli oil) (optional to taste)
Other ingredients required:
1 packet of gyoza wrappers, contains approximately 60 wrappers
2 Tbsp neutral cooking oil (vegetable, rape seed, canola, light olive oil etc) (for frying 1 portion)
¼ cup or 60ml of water (for frying 1 portion)
you can add if you wish, depending on your heat power. If you add too much water, remove with kitchen paper or fry with lid off until excess water has evaporated
1 tsp sesame oil (for frying 1 portion)

Are you saying the only positive thing to happen in 2020 is the return of Chef Dai? Kinda feels that way. Luckily gyoza is one of my favorite comfort foods!

HE'S BACK! We've missed you Chef Dai! I recently made wontons so I will need to try this recipe next time I get a hankering for gyoza. I am so happy to see you looking well and back to making delicious food! Due to the pandemic I had to cancel my planned trip to England (my parents are from London but I was born and raised in the States), but now that I know you have a restaurant I will be sure to put that on my list of places to check out when I finally make it back to visit family.

@@CookingwithChefDai The main complaint I hear about store-bought ponzu sauces is that they typically don't have enough of the bright citrus acidity or that they're more salty than savoury. Your ponzu sauce is tops; it's a permanent fixture in my fridge and I particularly like it on fish and chips.

Chef 👩‍🍳, I make my dumpling for the first time 🥟 Fry Goza, My husband his station here in iwakuni japan 🇯🇵 we always buy Goza out side base-, because his one ☝️ of the favorite food 🍱 until he wants me to learn how to make it, and I did! I checked in KZfaq it come across to saw you chef, then while watching you same time how you cook- I still got mistaken my 1st 6dumplings 🥟 because I supposed to fry a Little bit and check to be browned but I put water 💦 little faster- but, I manage pretty good 😌 the excess water with cooking oil I drained then put back for fry with sesame oil, it truns pretty well, then my rest of my dumplings 🥟 I followed exactly how you cooked patiently then it comes homemade perfect dumplings, My husband he enjoyed it appreciated our dinner last nights - thank you so much 🙏chef- God bless always 💕💫🧚‍♀️

Welcome back Chef Dai! I was really happy to see a new video from you tonight in my Notifications. Your videos are so easy to follow, and they always look delicious! I am very impressed with your skill set and professionalism, and you have a great voice for videos. I love cooking World foods, Japanese being one of my favourites. I like cooking authentically, and your Japanese cooking is exactly this. I've never made Gyoza before, and after watching this I now feel like making some. I don't eat a lot of meat so I'll make Vegetarian Gyoza. I'd be intrigued to see the different versions of the folding techniques at the top of the Gyoza. Thanks for your hard work in making these videos. We'll all look forward to future videos. I'd love to see some different Japanese curries, made with homemade curry block. Miso Soups made with different Dashi stocks and Chicken Katsu-Oyakodon. Shaun, Nottingham UK :)

Thanks so much for the kind words Shaun. I will endeavour to make those dishes for you. We already have an oyakodon and katsu recipe on this channel. If you want to make katsu don, simply follow the oyakodon recipe and substitute the chicken with a katsu. The sauce and onions are exactly the same. Hope that helps
