what you will be needing
4 tablespoons melted butter
1/2 c. finally diced yellow onion
1 packed tablespoon finally chopped garlic
4 c. chicken stock low sodium if like
2 medium carrots skin removed cut however you like but fairly thin
1 teaspoon seasoning salt
1/2 teaspoon paprika
1/2 teaspoon black pepper
4 c. cubed Yukon gold potato
6 c. broccoli fairly large pieces
1/2 teaspoon celery seed
3 c. whole fat milk
6 tablespoons corn starch
1 7oz can crema found in baking areas not condensed milk
3 c. freshly grated American block cheese
salt to taste
top with crispy bacon and more cheese and a dollop of sour cream....Enjoy❤
Delicious with some crusty bread or served in bread bowls

Thank you for this. I'm only 24 and just lost my grandmother exactly a week ago, and she raised me and was my best friend. Her health declined so fast, I'm still in shock. Something we always shared and bonded with was cooking! Especially soup omg! Soup is the best. I wanted to cook a brocc-potato soup and I keep having to remind myself I can't just call to her in the other room to ask for a recipe. Thank you for making videos for lost youngins like myself. This one is a WINNER! I made this soup last night and my husband raved about it. He isn’t a person who talk details but he was telling me things like, just love the flavor of the cheese, it’s so smooth and so filling. I added small bits of ham in mine because hubby likes it. AND he woke up this morning still talking about the soup. I will definitely be making more of your recipes🥰

Don’t ya just LOVE to feed things to your loved ones and have them rave about it ?! That’s so rewarding. I bet you smiled for days after that . I’ll be making this exact recipe soon. I made her potato soup . But added lots of veggies and then made a cheese sauce based on this recipe and added it . Wow ! It’s creamy , thick and delicious! Ima go eat another bowl 🥰

This is exactly the way I feel about the POT, my mother had the same pot and it really brings back happy memories. I wish I could find one to buy. Do you know the brand name? She l also had a great old fashioned cook book and my sister and I searched for that book and could not find it either. My mother was a great home cook!

So true. My Mom (and her Sisters / my Aunts) were fabulous home cooks and bakers. This pot reminds me of when Mom made Chicken and Dumplings. I evolved into a pretty good home cook / baker, but there were many things Mom made that I wish I could go back and learn from her. Dumplings for one, and she made a mean Chou pastry for one of her signature appis - Seafood Bouches. We were 7 kids + 2 awesome parents. We miss them every day 💜👩🏻‍🍳

Hello Margo...you can substitute heavy cream with a bit of sour cream adding at the end of cooking then turn off heat

Donna this was delicious! I used unbleached flour instead of cornstarch and heavy whipping cream instead of canned cream. I also added chives as garnish.

I'm 76 now, but I learned to use cornstarch as a thickener from my husband, who learned it from his mother, a Czech lady. It's also wonderful in beef stew to thicken it and add a dash of Kitchen Bouquet to give it for that brown rich color . I haven't made this soup yet but I will in 2 days. I observe meatless Fridays and this will be a perfect meal for me from now on. I can almost taste it. Thank you Donna.

My 16 year old granddaughter and I tackled this recipe yesterday. I used a 32oz box of chicken stock and added a sprinkle of bullion for more salt at the end. Everyone loved it, its so dang good! A keeper for sure. Thanks for a great recipe!

I just made this, delicious! Instead of making a separate cheese sauce, I used some Half&Half that I had on hand. After the vegetables were done, I added 2 cups of milk, 1 cup H&H, and the three cups of grated cheese. I heated just until I saw a few bubbles. Mine is a thinner soup, just slightly thickened by the cheese and potatoes.

Oh My Gosh, the Pot You are using,( hammered aluminum ) I Believe, is EXactly like the One My Daddy taught Me how to “COOK” in when I was 14 yrs Old!! The Best POT Ever!!! Just dont cook anything acidic in an aluminum pot. Major contributor to Alzheimers is aluminum.

I think most of us have the hammered aluminum pots that were made to last for a lifetime. I have 3 or 4 with the lids that are also used as serving platters. We went to try too replace a lid a year or so back and it was a little more than $300 for the lid alone. Needless to say I didn't replace the top. These pots were made for large families and were used primarily for soup's of any kind, usually vegetables from your own garden, and if there was meat caught for the day around the homestead.

Glad you commented. My local grocery doesn't stock that crema, they do have the Mexican table creme crema in the fridge aisle, but I bought heavy cream to use when I make it tonight.

I made this; but, I used a white sauce (butter, flour & milk) and sharp cheddar cheese. I also cooked up some chicken tenderloins and added that to the soup. It was delicious; my husband loved it. Thanks for the great soup idea.

This is a wonderful recipe. We just had this meal tonight . I used heavy cream, instead of the crema, because it needed to be used up. Next time I will use the crema. I also added celery for the same reason, it needed to be used up. Thanks for the fabulous recipe!💯

I have the same pot and it's my "go to" for (all) things soup. I, too, love to make soup when it's cold outside, and I traditionally make my grandma's "French pea soup" every year in memory of her. She was French born and never learned English, but she told me stories of her noble ancestors, the Charpentier.

Oh my this delicious looking soup made me soooooooooooooooooo hungry! I want to make it right now but it's 11:00 pm a little late to be cooking dinner!! Ahh chicken stock was mentioned towards the end. Sounds wonderful and will have to try. Looks like maybe 6 hearty servings or 8-10 cups. Thanks

Celery seed, garlic are very important in soups even when using a stock. Herbs do a lot as well. Celery seed creates a salivating response and it is very cleansing to the system. The same is true with cilantro. This looks yum.

I know this video was made 2 years ago bit I just found the recipe last night and made it for my boyfriend and I, and it was such a hit! I forgot a couple of ingredients including the table cream so I used a mix of flour and warm water as my thickening agent which gave it a grainy texture but still good! I can't wait to make it again with cream! Thank you!

Hello Allison I’m so happy you enjoyed the soup❤️ for the soup being grainy may I ask if you turned your heat off before adding the cheese because this will cause gritty soup I sure hope this was of some help and I sure hope you can find the crema and if not you can substitute with heavy cream❤️

@@CookingWithDonna Donna, it was WONDERFUL!! My parents also came over and loved it with a spring mix salad s and fresh bakery rolls! I added about a tablespoon of Better Than Bouillon Chicken Base and actually used 5-6 cups of chicken broth along with a couple pinches of Italian seasoning. I usually will add just a touch of white wine to a vegetable soup, but with the additional bouillon it was not necessary. Thank you so much for sharing!
