Ingredients:
Medium Rava or Semolina - 3 Cups or 1/2 Kg
Sugar - 3 Cups
Water - 1 and 1/2 Cups
Ghee - 8 Tbsp
Cardamom Powder - 2 tsp
Cashew Nuts - 20-25 pieces
Raisins - Few
Method:
1. Add 1/2 Kg or 3 Cups Medium Rava or Bombay Rava to a vessel.
2. Add 1 and 1/2 Cup of fresh grated Coconut.
3. Mix well with the help of your hand and keep this mixture aside.
4. Add 2 Tbsp of Ghee or Clarified Butter to a pan.
5. Once Ghee melts, add 20-25 Cashew Nuts pieces and roast the same.
6. Once the Cashew Nuts turn golden in color, transfer to a bowl.
7. To the same pan, add 5-6 Tbsp of Ghee or add more if required.
8. Once Ghee melts, add the Rava-Coconut mixture and roast in a medium flame.
9. You need to roast the ingredients in medium flame for at least 15 minutes.
10. The aroma from the Rava should appear when roasted well.
11. Transfer this to a plate and spread with the help of a ladle. Allow to cool completely.
12. Add 3 Cups of Sugar to the same pan.
13. Add 1 and 1/2 Cups of water and mix well.
14. Allow the Sugar to melt in a medium flame while stirring continuously.
15. Slowly, the Syrup will start to boil and bubbles start to form and continue to boiling the Sugar syrup. Check in the middle and boil the mixture till you get one string consistency.
16. Once you reached the one-string consistency switch off the flame and add the roasted and cooled Rava-Coconut mixture to the Syrup.
17. Add roasted Cashew Nuts.
18. Add 2 tsp Cardamom Powder and mix well.
19. The mixture has now turned watery now.
20. Allow the mixture to cool till it turns warm or till you reach a stage where you can hold it in your palm to prepare Laddus.
21. Mix the mixture well with the help of a hand once and by keeping one Raisin in the middle and start making Laddus.
22. With these measurements, I prepared 50 Laddus.
