Hey folks! Anyone LOVE Chili's Southwestern Eggrolls? I do! Grab the ingredients below to make these in the comfort of your own home and don't forget to make that creamy avocado ranch for dipping! Enjoy!

Ingredients
Eggrolls:
1 Chicken Breast
Vegetable Oil
2 tbsp minced Red Bell Pepper
2 tbsp minced Green Onion
1/3 cup frozen Corn
1/4 cup canned Black Beans, rinsed and drained
2 tbsp frozen Spinach
2 tbsp diced, canned Jalapeno Peppers
1/2 tbsp minced fresh Parsley
1/2 tsp Cumin
1/2 tsp Chili Powder
1/4 tsp Salt
1/4 tap Cayenne Pepper
3/4 cup shredded Monterey Jack cheese
Flour Tortillas
Avocado Ranch:
Half a fresh Avocado, mashed
1/4 cup Mayo
1/4 cup Sour Cream
1 tablespoon Buttermilk
1 1/2 tsp Red Wine Vinegar
1/8 tsp Salt
1/8 tsp Onion Powder
Dash dried Dill Weed
1/8 tsp Garlic Powder
Dash Pepper
Fresh Parsley, minced

Take your pepper corns out of the grinder and roast them a bit in your skillet. Put them back into the grinder and taste tje magic. The flavor is so much better.

I have made these before. Added some green chili's in as well and used spring rolls instead. I like the thinner crispier shell when they cook. They are perfect to pre-prep and freeze well and perfect to make in bulk for a quick snack. Pull them out the freezer and fry. Thanks for sharing!

You did the right thing by using egg roll wrappers. The flour shells puffed up soon as mine hit the hot grease and all the filling came out. Luckily I only did one. Ended up putting them in the oven which messed up the whole experience. Will try again with egg roll wrappers.

@@tonyasanders9652 Just make sure you seal them tight and right. I use corn starch mixed with water as my glue. And no open side. Swaddle like its a baby lol

Oh my stars, AB! This recipe was a GIFT! I used to work at Chilis and the eggrolls were pretty much the only thing I'd eat, even before I worked there! I remember wanting to try and figure out how to make these in the past, but it just seemed like so much work. But as you say, these were "SUPER super simple" 😆 and they tasted just like Chili's! I made these last night with my husband and he loved them as well! I followed the recipe exactly! And the SAUCE?! 🤤🤤🤤 Will, definitely be making these again! Thanks S&G w/ AB!

I finally did it! It was sooo delicious. I accidentally used turmeric instead of cumin But i rounded it off with taco 🌮 seasoning to make up for what might be missing I also used Jarred(pickled) jalapenos Fresh baby spinach Frozen corn (thawed in fridge) Two small onions One red bell pepper 1/2 green bell pepper Green onions Freeze dried onion chives Lawry's Seasoning salt Black Pepper Cayenne pepper Paprika Chilli powder Onion powder Garlic powder Chicken breasts Black beans Corn Olive oil Tortillas Slurry,😁😁😁😁😁😁 Canola oil Dipping Sauces: Plain Greek yogurt (as sour cream) Buttermilk ranch dressing And I made his chicken egg rolls Sooooooooo Gooooood Thanks AB 😁😁😁😁🤗🤗🤗🤗🤗 I'm SOoooo delighted how it came out. Garden full of green onions is where it's at. I'm never without them. Too many people throw those root ends away, not realizing they can re-grow them & have fresh green onions year-round.

H2o is the only way to go!!!!!!!! I quit drinking pop altogether when the pandemic hit. It's so nasty to me now! 🤢🤮 I detoxed the other week and had to rebalanace my gut. I got some Probiotics & my Mama suggested ginger ale. Three stores later I was able to find Reed's brand ginger ale which helped, but I still only drunk about a 1/4 cup! Water! Water! Water! Cleanses everything!
