Shopping List:
1 lb chicken (cooked)
eggroll wrappers
1 red bell pepper
1 onion
2 cups spinach
8 oz pepper jack cheese
1/2 cup black beans
1/2 cup corn
cilantro garnish
2 tbsps butter
AP seasoning
1 tbsp garlic
smoked paprika, chili powder, chicken bouillon powder
oil for frying
Avocado Mayo:
1/2 cup may
1/2 cup buttermilk
1/2 Large avocado or 1 small
1 packet ranch seasoning mix

I agree with you about air fryer egg rolls. I’ve made them both ways. My air fryer has been surrounded by cobwebs and tumbleweed with a storm cloud hanging over it for quite some time now. 🥘♥️

I love making these at home! I love that you are recreating restaurant recipes! Just a friendly fyi, Chili's uses flour tortillas as the egg roll wrapper. I'm sure it's just as delicious with a traditional egg roll wrapper though.

I worked at Chili's when these SW egg rolls were first introduced at our restaurant. I understand this is a copycat recipe, but I feel the avocado ranch dipping sauce was even more simple to make because it was just Avocado, Ranch dressing and lime juice, that's it. And it's good with anything considered "Taco Night" at your house. These are one of, if not THE best menu item.

I made these tonight !! They were awesome! I had to make mine with flour tortillas instead of egg roll wraps and it was a little tough because of the tortillas, but even then everything was delicious!! However these are Definitely game appetizers!

Been watchin you for years i luv your recipes 😊. When rolling egg rolls iys easiest to start from the corner closest to you and use the outer folds to lock in the filling. Then you roll it over ❤

I love southwest flavoring! I want to use this filling (maybe add rice) inside a tortilla wrap for some sort of toasted burrito situation. 🤤 Edit: I think Duke’s is your favorite mayo but not totally sure because Duke’s is a southern thing.

I love going to Chili's just to get Southwest egg rolls when I watched you make these about a year ago I have been making them myself ever since I have not set foot back in Chili's because for the price I pay for to get two egg rolls from them I literally can make a whole batch for the family at home this is so simple so convenient I love them. And I love how they're so versatile you can put your own twist in them

For me, the only thing this is missing is cumin in the chicken veggie mixture. Pro tip for making them extra crispy. Double fry them. First fry at around 325 until just starting to brown. Let drain on wire rack for about 3-5 minutes. Then second fry at 350-375 until deep golden brown. Crispiest egg rolls you'll ever have.
