I retired from the food service industry in 2020 after 49 years on and off. A big part of my career was techniques and recipes I learned from this wonderful lady's books as well as Jacques Pepin's.

I love how she says she's got a little too much oil so she's just going to dump some out "and I'm NOT dumping it on the floor". 😄

I am always surprised at how quickly half an hour passes when spent in Julia's delightful company. If I am ever presented with a scallop fresh off the boat, I will know how to proceed, and you can be sure I'll be the first in line to taste the roe!

She was right about most of us never seeing a whole scallop. This was new to me. And I want to try the roe, now, too.

Her scallops Parisienne are fantastic, I make it often and always surprised by how delicious it is…

This episode is almost 60 years old and amazing in it's efficiency in covering not only a range of basic to advanced cooking skills, but also in showing something to learn about cooking as original now as it was then. None of the cooks on popular channels do scallops in the traditional french manner any more. In most of America of course good scallops are just plain hard to find. But talk about awesome if you could get it.... Rely on Julia as usual to tell you how.

My family always had scallops on Christmas, not for any religious reasons, we just like seafood. We also usually had crabcakes, shrimp, and fried oysters. But seeing these scallops is making me hungry and nostalgic for our old family Christmas dinners.

@@davidvilmin3457 I’m a chef at a country club in Fla. I always celebrate her birthday some way professionally by running specials inspired by her, and at home personally by recreating one of her recipes for myself and friends. Always between August 13th, the day she passed, and August 15th, her birthday.

I wish I could get fresh scallops where I live, but I have to make do with frozen ones. Still I will try her recipes next chance I get.

Adding - just watched the part where she suggested to blanch the frozen scallops so they won’t go gummy. I’m eternally grateful for this tip!

I laughed when she dumped the excess oil and said"not on the floor". Most often, than not , I spill the oil somewhere, somehow.
