HOW TO MAKE GLUTEN FREE CORN WITHOUT A PRESS
🌮 Homemade Corn Tortillas - Makes around 10 tortillas (depends on the size you want)
INGREDIENTS:
Masa Harina / Cornmeal Flour / Makai Atta- 1 1/2 Cups (180 grams)
Salt - to taste (1/2 teaspoon)
Melted Butter (unsalted) / Oil - 3 Tablespoons
Water (Luke warm) - 3/4 to 1 Cup (187ml to 250ml )
METHOD:
1. In a mixing bowl mix masa Harina / Cornmeal flour and salt.
2. Add melted butter and mix (crumbs will form).
3. Slowly add water and mix. You may need less water so add water gradually and mix until dough starts to form into a ball. Cover with a kitchen towel or plastic wrap and let it rest for 30 minutes.
4. Place dough on a floured surface and cut into 8 to 10 equal size pieces, and form into balls. Place them in a lightly floured bowl, and cover with a damp kitchen paper towel to prevent drying.
5. You will need a plastic bag (cut the top and both sides) or use 2 sheets of plastic cling wrap.
6. Slightly flatten dough ball and place on one side of plastic sheet, cover with the other plastic and press to make tortillas by using a rolling pin, flat bottom glass or baking dish or a heavy flat bottom pan. (After pressing you can use a lid, plate or a large cookie cutter to cut out perfect round tortillas)
7. Pre-heat a pan on medium to high heat and cook tortillas for 1 to 2 minutes on both sides. Flip once again and cook only for few more seconds, tortilla will puffed up. For charred marks on tortilla cook longer.
8. Immediately wrap in a kitchen towel and keep inside a tortilla warmer or in a hotpot. Tortilla will stay soft and pliable until serving.

Hi Sunita, Thanks for stopping by 😊 I personally prefer to make fresh tortillas. You may store leftover tortilla, keep tortillas covered and cool completely. Then wrap with plastic wrap or foil and store in a Ziploc bag removing as much air as possible. You can refrigerate for up to 2 days, or freeze for 1 month (can last longer if stored properly). How to reheat tortilla? To reheat and make leftover tortillas more pliable, soft and easy to roll re-heat in a microwave oven; put tortillas in a plate covered with a lightly damp kitchen towel and microwave for not more than 10 seconds at a time. Repeat if needed. To re-heat in oven, wrap tortillas completely in aluminum foil and put in a 180 C pre-heated oven for around 8-10 minutes or until warm. Thank you! You can keep homemade corn tortillas covered at room temperature for few hours if you plan to use them soon. For longer storage, you can keep them in the fridge for up to 3 days. Once they have cooled, stack the tortillas, wrap them with foil or plastic wrap and place them in an airtight container or resealable plastic bag (squeeze out excess air). To ensure your homemade corn tortillas remain fresh and pliable, it's important to properly reheat them. I have made homemade gluten free corn tortillas on a comel for several years but I have not been successful in making them crispy by frying them. The tacos always puff up and collect oil rending them too greasy to eat. Do you have a method and or recipe to make the taco shells crispy like the store bought GF taco shells? Thank you for the video.

Thanks for your comment! Try lightly brushing the tortillas with oil before frying; it will help create a barrier, preventing excessive oil absorption while crisping them. You can also try baking the tortillas instead of frying. Preheat the oven to 375°F (190°C). Lightly brush both sides of the tortillas with oil and shape them into taco shells by draping them over the oven rack bars. Bake for 5-7 minutes until crispy. Then fill with your favorite ingredients. Hope it helps!
