HOW TO MAKE GLUTEN FREE CORN WITHOUT A PRESS
🌮 Homemade Corn Tortillas - Makes around 10 tortillas (depends on the size you want)
INGREDIENTS:
Masa Harina / Cornmeal Flour / Makai Atta- 1 1/2 Cups (180 grams)
Salt - to taste (1/2 teaspoon)
Melted Butter (unsalted) / Oil - 3 Tablespoons
Water (Luke warm) - 3/4 to 1 Cup (187ml to 250ml )
METHOD:
1. In a mixing bowl mix masa Harina / Cornmeal flour and salt.
2. Add melted butter and mix (crumbs will form).
3. Slowly add water and mix. You may need less water so add water gradually and mix until dough starts to form into a ball. Cover with a kitchen towel or plastic wrap and let it rest for 30 minutes.
4. Place dough on a floured surface and cut into 8 to 10 equal size pieces, and form into balls. Place them in a lightly floured bowl, and cover with a damp kitchen paper towel to prevent drying.
5. You will need a plastic bag (cut the top and both sides) or use 2 sheets of plastic cling wrap.
6. Slightly flatten dough ball and place on one side of plastic sheet, cover with the other plastic and press to make tortillas by using a rolling pin, flat bottom glass or baking dish or a heavy flat bottom pan. (After pressing you can use a lid, plate or a large cookie cutter to cut out perfect round tortillas)
7. Pre-heat a pan on medium to high heat and cook tortillas for 1 to 2 minutes on both sides. Flip once again and cook only for few more seconds, tortilla will puffed up. For charred marks on tortilla cook longer.
8. Immediately wrap in a kitchen towel and keep inside a tortilla warmer or in a hotpot. Tortilla will stay soft and pliable until serving.
