This St. Paddy’s Day themed recipe demonstrates my favorite version of corned beef and cabbage, and my favorite version of Shepherd’s Pie, which as you’ll see in the video are the very same thing. By the way, it’s okay to make it more than once a year. Enjoy!

This recipe is, hands down, one of my favorite tastes ever! I only share it with very good friends. My husband is Irish American from Northern Ireland. They were Protestant. His mother made the dish with the corned beef, cabbage, carrots, and potatoes in one big pot. Everything became soggy and fell apart. She referred to it as a "boiled dinner". I love Chef John's method.

Shepard's pie is made with Lamb... ergo the "Shepard" bit. Cottage pie is made with beef. Though I wouldn't really call this a cottage pie either, since it has no gravy.

@@BenWillock Personally, I believe that Chef John has the right to name any of his original and geniusly genuine recipes anything that pleases him. His imagination is spellbinding. He saw what we all see and stepped it up, making something original and better than what it was, and now, we, who have tried it, all know is best. Such a conundrum to some that are still in the early stages of learning. Never before have so many known so little about so much! There are so very many words in the English Language can each have, and DO have, multiples of meanings. Then again, Ben, perhaps the word "shepherd" has several meanings, in itself. For instance, there are all kinds of flocks that are shepherded. Religious Leaders shepherd believers. Great Chefs shepherd Cooks to be good Cooks, and, even some to be Great Cooks. Chef John was first an Explorer; then a fine-tuner, in taking the time, and no doubt, repetitive stabs at it, Chef John's Corned Beef & Cabbage Shepherd's Pie is a very great meal, just ask anybody that has had both, the old version and the new. Chef John's imagination put to work, took something that we all love the way it was, and he made it good, then better, and then the BEST. He made it great, in fact! Ben, good, better, best. Never let it rest, until your good Is better, and your better is the best! Most obviously, Chef John is himself a shepherd of good Cooks, like me; and, he Shepherd's good recipes, fine tunes them, and makes them the BEST. "CORNED BEEF & CABBAGE" Shepherd's Pie is a perfect name, reinvented by the Inventor--the Genius, our Shepherd, Chef John.😍

It is really delicious and deceptively “light”. I contributed this tear with Irish soda bread but it paled in comparison to the mss as in dish. Kudos!

As a long time radio producer/host, my view of what makes these shorts enjoyable is the writing. The visual end is first rate, and his staying off-camera was a marvelous idea (not because of his looks of course), but keeping focus on the food. You could say he’s the Master of Knishes (recipe please?) with these Food Wishes. They pretty much stand as radio segments because of his writing for the ear, not the eye.

I'll raise up my pint-sized mug full'o'Ice, Bailey's Irish Cream, Vodka, and Leprechaun-sized, so as not to curdle, gulp o' Milk mixed in; and lend you a "Happy St. Patrick's Day Pic(on)nic(ky) Toast to You, Shadowfirekarp, and our most very creative, never-to-be tongue-tied, Devilishly Decadent, Chef Extraordinaire!" Although, my most usual out'o'doors, (not indoors), eventful Toast would be, (at a savory, eating and drinking gala event, such as this), a simply desperate and ostensibly loud, "Chairs!" I imagine, Just then, all eyes raise up from their enticing, gastronomically magnetic meals, only to spy young Erin-going-bra- less, bouncing down across from, (of all people), the likes'o'me! All of the juicey Corned Beef & Cabbage Savorers had their eyes fixed and agape, as young Erin-going- braless missed her aim at the tough-it, and flopped down hard on her duff, (with her bowl-full of Corned Beef & Cabbage, clenched so worriedly and dearly in her steady, youthful hands, that she nary spillt a droplet of its' one'o'a-kind, every time, juices. Erin's long, bare, practically hairless legs were just as crossed as my weary 65-year-old, eyes; that are situated in my very own, hard to remember myself being 14-years-old, noggin. It seems, when a very clever and image'ahh'belly tastey original recipe's Creator, cooks up his original, never thought-of before, ideas, he attracts not only adoring throngs of genteelmen but, rather, old and young bouncy women to taste and delight in the fruits of the Chef's truly-genius labor. Occasionally, an Irish Soda. Bread-Breaker's attendance floors you, and you just have to sit down; and delight in the best Irish Cheese grated Mashed Potatoes that you've ever encountered in your life!

Of course, use your trusty ricer to make the perfect mashed potatoes. It's the best investment I have ever made in the food arena. I real necessity for us Irish...I don't know how our family didn't know about this wundertool.... I have convinced several of my friends that it's the only way to go for mashed potatoes (or as those finicky French call them pommes purée.) For the $30-40 investment, it's well worth it. I can't make mashers any other way now...God bless the French chefs! God bless Julia, Jacques, and especially Joël Robuchon!

Try braising the corned beef in Vernors Ginger ale 2 hours fat side up @ 300. Flip, then baste occasionally to create a glaze on top. Keep cooking til tender, probably another 2- 3 hours. Rest, cool and slice. I simmered the cabbage and carrots in the braising liquid, diluted. Assemble as Chef John recommend, or whatever order you like, as you are the Buddy Guy of your Sheppard's pie🙄 Just keep the mashed potatoes on top, *or else... I went with meat/ veggies/Swiss/ mashed. 400 till brown, then buttered the top. *or else you will probably end up with a funky TV Dinner soup! Thanks Chef John, for creating fun, approachable, inspiring ideas that make us all better home cooks! Brian Long time listener, first time caller

I boil 2q water and 1tsp salt then dip the beef in for a minute rolling then dump that off as waste and give it a little tumbling sear then pour in the already heated water+spice+herbage from the side and then go. It gets rid of quite a bit of the very sour foam and cleans a lot of the air taste off the meat. If you want with this specific recipe you can substitute in a couple bags of angel coleslaw. I do that in pressure-cooker stew all the time. Your trimmed fat... slice it thin and freeze it for use on pizza.

Made this yesterday. I knew it would be good, because chef John recipes almost always are, but this was even better than I expected. I did use regular cabbage, because my store didn't have the hoity toity stuff. I also used smoked Gouda instead of cheddar, because when I went to the store, I was certain I had cheddar at home, and it turned out I didn't. But hey, that's just me cooking. Those changes didn't seem to detract from the recipe.

You've done it again Chef John ! I made this for our Mother's Day dinner this evening and it was a roaring success. There were several demands for seconds, however, the best accolade came from my 8 year old grandson who said "it wasn't good it was perfect". I should admit to adding a cupful of green beans in the layer with the carrots (only because we usually have them with our regular corned beef dinners), apart from that I followed the recipe religiously. Best of all it makes serving the meal a breeze !

We use regular cabbage & after cutting out the core we chop that in 1/2 inch chunks & add that to the simmering liquid to tenderize before we add the rest of the cabbage, we waste nothing if possible, very nice recipe, btw, a good mix of fresh grated cheese is 50/50 Irish cheddar & swiss gruyere

I was looking for the regular Corned Beef and Cabbage recipe, and found this. it looked so good I Had to try, and it was a Home Run!! everyone loved it as did I And just FYI, the corned beef I bought was not Brisket, but instead was Corned bottom Round from the Butchers at Browns Valley Market, here in Napa Valley. And it was wonderful! Thanks Chef John!
