Now that hash knife is on my wishlist! I marveled at my Memaw sharpening knifes on her "sharpening stick". She worked in some of the best restaurants in NYC and she was SO fast at it. She is the one who introduced me to cooking with cast iron.

Dad taught me how to make and care for knives. I still carry my Great Garmpas 110 Buck to this VERY day. I still use his old stones too. Let's keep the legacy of old knowledge goin folks. They don't teach these things in school..

That was a wonderful video every guys got a method of sharpening but rarely do you see anybody use a stropping leather on KZfaq the best way to de-burr and hone a blade. I especially liked the shop video for Tom and his wife Nancy I’ve always admired craftsmen who can take their skill and work it into a small business.

Good tips and coming from someone who cooks for himself, I agree 1000% you want that knife sharp. A dull blade in the kitchen is a dangerous thing no doubt, it don't cut ya it shreds ya and that hurts like all fire.

My lovely bride surprised me with a hash knife today. Thing is spectacular. I thought I had decent knife skills, but this is a game changer. (got some seasoning too. Grilled steaks, they were fantastic!) Plus you all included a sticker that went directly into the Jeep. Great products, look forward to buying more from you in the future.

I wasn't any good at sharpening a knife until I went to Little Rock AFB, Arkansas and was given a knife we had to use when working in the parachute shop where we built up pallets with cargo on them, and was dropped from the C-130 aircraft. I still have that knife around home now and it has been through so much and still is sharp and does a great job. The unit purchased the wheels where we could sharpen our knives on and there was three stones on them and that seemed to be the best tool for working on knives. The one stone which let you sharpen a blade which was not that dull was the best one to use, and I saw most of the people at the shop wear out a good knife in less than 10 days because they didn't know how to work with a knife.

Honing and stropping with a steel and a leather strop is a good way to help preserve your blades. Honing is different because you are basically ironing the edge back into place. Using abrasives like a stone will remove metal, many times, un necessarily.

Kent. I love that hash knife. I had a stroke in June of 2018. Hence the name of my channel. That hash knife would be perfect for people with mobility issues.

After a year or so watching your videos I set off in search is an antique hash knife. Stores online where ever. Could not find one. I ended up buying one from your shop. What a great piece of work. Think I’m going to get the sheath for it sooner of later. Going to be a regular tool in my cooking endeavors.

Thank you for the video and for mentioning 'food safe mineral oil' I have met a lot of people that did not know the difference.Food grade mineral oil and petroleum based mineral oil.

Great video Kent, several years back my awesome sweetie bought me an Apex Edge Pro stationary angle knife sharpener. It's takes a little skill to use, not much, but you can sharpen and polish the cutting edge of a knife to a mirror polish. It's the most awesome tool I've got for sharpening. Once you use it you don't want to drag that knife edge over a steel again... cause it does more harm than good. My Grandpa gave me a set of stones made in the early 1900's and I just treasure those things... never seen any like them anywhere else. I really enjoyed this video, agreeing with you that a sharp knife that is cared for properly is a very useful tool.... that is until they tell us we can't carry them any longer. in case anyone wonders why you dont put knives with wooden handles into the dish washer the hot water makes the handle swell and will cause the rivets to break loose and make the handle loose and fall of or cause the wood to crack because of the swelling remember metal dosent give like wood does and it also dosent absorb fluid like wood

Solid tips. I used to work with an old butcher that could put an edge on a butter knife so sharp, you could shave with it. He had a thirty year old carbon steel steak knife, he said had been on the stone three times in that time. (Someone else used it and took the edge off.) So I asked him how he kept it so sharp, he said, "The most important thing is when you get to the bone or the block, just stop pushing." He also said if you didn't have it sharp in three strokes on each side of the steel, you probably weren't going to get it sharp. I watched him cut tons of dry aged prime steaks with that knife, he made it look so easy and effortless, he was a master. Thank you and your wife for making people's lives better by showing there still a few masters to learn from out there. We appreciate it and God bless you both.

Years back i recall a Gillette razor commercial that highlighted their "50 foot strop" polishing the final sharpened edge of razors. Years back, my barber who used a straight blade for shaves and final trims around the neck after each haircut, used a 3 foot leather "strop" before every use of his straight razor. Un believable edge ! The finished trim was baby butt smooth. Sadly, today folks aren't trusted with a real live razor blade. Even so with good knives, many don't have great knives and those who do, some don't use the correct sharpener on them. The craft is long gone it seems.

Wow, I needed this. Was never sure how to use those sharpening rods. When I used to chop up a lot onions for work it was always worse getting cut by a dull knife.

I like your explanation of how to use the steel. I've seen my brother-in-law use one, he learned how when he used to manage a restaurant. My father-in-law usually places it against the counter and sharpens that way. My wife "thinks" she knows how to use one, usually ends up rounding the edge over so it's like a butter knife. My mother had a knife similar to the hash knife, only with a little shorter handle (closer to the blade), all metal. There's a couple of things she had that I wish I had now. I guess they went south when Dad moved.

Thats Honing the Knife is lining the Edge, to keep the knife Straight, when its Rolling Over the Knife is Removing Metal to Create, the Edge both sides, you will need a Work Sharp Guided Field Sharpener, Or A Whetstone, Keep Up The Good Work Kent,

Think that's why my sister wants me to come to her house so often, she knows that ! 😊 I've got an old hash knife made from a big cleaver that my grandfather hauled from Tennessee to Arkansas in 1909 in a chuck wagon, wouldn't take a million dollars for it ! Your Hash knife is also called a Mezzaluna. They have either 2 handles, 1 on each end or like what you have. You can get them alone or with a rounded out cutting block that matches the curve. You can get them at the big box stores. I have 3, a single blade, double and triple blades. The steel does not sharpen a knife. It maintains an already sharp knife that has been used a lot. It corrects the edge back down to a straight bevel when I gets rolled over on the board. Re-aligning the bevel makes it cut cleaner and better. Until it does actually get dull. The V steel sharpener is the worst thing you could ever use on good quality knife. It does rake and scrape and leave chip marks knife/sword fight. sharpened 4 knives for an elderly friend on Monday. It took me 30 minutes per knife to get the dings out of the blades first then, I could sharpen them properly. I told him to NEVER use that thing again. I was a Chef for 35 years and was taught how to sharpen my very expensive knives myself many years ago by a Japanese Sushi Chef friend. There are all kinds of sharpening systems on the market and videos showing how they work. If you don't know what you are doing with a wet/oil stone. DON'T use them. Ass up and buy something like a Lansky or Wicked Edge type system. A dull knife is a dangerous knife. They also tear thru the food and slow down your work and production. Let alone the aggravation that comes with it. There are tools for sharpening serrated edges as well. As Kent said. Just wash it off after use and put it away in a block or magnetic hanger or use plastic edge guards. Throw a knife in a drawer with other crap and you just ruined you edge. It doesnt take too much to chip a real thin blade or dull it when up against other steel. Sorry Kent, not meaning to jump in, but felt I needed to a little to help. Love the show. Couldn't agree more. Kent should stick to cooking and have someone teach him how to sharpen a knife properly. If he did that, he could throw that steel in the garbage where it belongs. Been using a Lansky for over 20 years to fix knives that have been damaged using a stone or steel. Keep up the good cooking, Kent.

Everyone I watch who cooks or deals with knives have been uploading videos on sharpening recently... This is a weirdly and funny coincidence. Still watched every one from all the channels I watch and all great content.

I bet a lot of people that have cut them selves from cutting food for cooking come from a none sharp knife, prep and caution is key to doing it right.

Ted, You're right. But like a said Preparing and Caution is key. If you're going to be a none wise one to sharpen a knife to point it cuts down to the bone, and not take the "caution." You should not be doing this. Go to restaurant that will make your food. Simple.

I started training as a chef when I was 16. Butcher's steel was great. Not scalpel sharp but pretty good!

A sharp knife will cut you just as well but it's over quicker. Truer words have never been spoken:). I've cut a finger tip off more than once, didn't realize it until I saw the blood. LOL. Good advice on the sharpening steel and strop. Personally, I hate sharpening dull knives. I religiously use my steel every single time I use a blade. Takes 30 seconds and my knives are always razor sharp.

Absolutely fantastic video Kent ( and Shannon. lol ). Very informative. I remember as a kid the electric can openers that had that knife sharpener thing on them. We never used them but thought i would mention it. I use hand can openers as an adult and ONLY sharpen knives the proper way. Im ordering a Hash Knife as soon as i finish posting this. Im going to bet Kim is going to be working a whole lot this month for that employee of the month. lol Thanks and God bless, as always. PS. Ordered.

You can also polish the edge of a blade with cardboard using the same technique as the leather if you don't have any.

Yes...a flat piece of thin cardboard with little flex, or even a strip of denim glued dead flat to a clean board. Apply a THIN coat of Mothers Mag and Aluminum polish and let it dry

I have one of your hash knives. It’s great! Only issue I have with it, is that the handle is a little too high for my liking. If it was half the height, would be perfect! But none the less, it’s excellent!

The steel is used for honing the blade not really sharpening it. It is designed to to keep the the tip of the blade straight.But blade maintenance Is priority number one for any cook! I’ve had some knives for over 30 years! They are like old friends!
