I love realistic and easy what I eat in a week videos, so I thought I would continue this series and make a cozy version alone in the woods. I eat a lot of food that I have meal prepped, along with foods I can throw together, and more luxurious and time consuming plant based meals on the weekend!

Several years and many videos ago, in a land far away, in a time from before, I remember you, Immy, saying that you were not a real “Cheffy Chef”. It’s a good thing that you never let anybody dim your light… cuz I just gotta say that your sustainable cooking/seasonal eating journey and your kitchen adventures have really inspired me. I get a real “take away” (the recipe type) from your food videos every single time. I’m uber-excited to watch this video when my classroom empties out at the end of this very busy day. You really are a “cheffy chef” to me. Much respect!! 💦🌎Ⓜary💕

Your “just using stuff up” meals are better than my carefully-planned, took me hours meals. 😂 I did make that RPL chili - so good!

1000% agree on the sugar. It’s really wild. Half is usual plenty. Idk who is enjoying all that sugar. It just hijacks the whole dish!

This was so perfectly timed for me ❤️ I've fallen out of the habit of making proper meals and it's really impacting my mental health, but some of these yummy dishes seem like something even I could muster up the motivation to make! Thank you ❤️

When you move to Colorado I highly recommend going to Simply Bulk in Longmont- it's a great bulk shop which is locally owned. Also recommend Cheese Importers (also in Longmont) for olive oils & olives

I agree-too much sugar in American desserts. I’m an American and I always halve the sugar.

This was so calming to watch. I often struggle to use up food because I don't like eating the same thing back to back. And sometimes I use half a glas of tomato sauce and then forget about it. Thanks for showing easy variations of the ingredients you used. Sometimes it's really just easy steps to be more conscious of the food we eat and limit our food waste. And that chilli with pumpkin and the cashew cream looked really delicious.

The Toaster being slower might because of the lower voltage in the US. I learned that in a Britisch vs American Video by Evan Edinger (only it was about electric kettles).

Nice video. Our "pantry" (game closet) is filled with delicata and orange/green acorn squash we grew in our front yard. They are delicious, and nice to see others like them as well.

That chili is amazing! I made it a couple weeks ago. I love this video. Normally my partner doesn’t like leftovers, but whenever we’re about to go away on vacation he gets excited because it becomes a game of how much can we use up so it doesn’t go bad while we’re gone. Also, La Croix is so popular, but I dislike it too. Carbonated water, and other carbonated drinks for that matter, are not for me. Haha.

I agree with you on the sugar and I usually decrease by at least half in many recipes. Also, Rainbow Plant Life is AWESOME! It would have been much harder (and less joyful) for me to be vegan without her. I love food and she clearly does too! Good job using all of those squash...in one week! This is amazing.

I always eat coriander and parsley stems and beet greens and kale ribs - the only thing I could not make edible are carrot greens. Suggestions?

The U.S. has a different standard voltage so toasters and electric kettles take longer...which means longer tea breaks hehe.

I really do enjoy your videos. I like that they are calm, quiet, and show actual cooking. One thing that I hope you might think of cutting down on, though. That's the negative comparisons to American things vs. English things. It is a bit off putting to me.

Americans have really feeble electricity and really dangerous, it's half the volts so double the amps (i may be wrong about the amps) so their stuff doesn't get much work done. Don't bring American appliances back to UK with you or buy 'my toaster for life' out there because our electricity will fry them. People bringing over electrical appliances temporarily should bring limited and surge-protected (or buy it here, we have electrical shops) extension leads, of the one-to-one or two-to-one max variety. (Overloading powerpoints leads to fire.)

i mean, if you're visiting, it makes sense to bring your electric curler or travel iron if you want to, but you should get surge protection etc - students, work-study or sandwich year or posted-abroad for a year type people

Hello from France, firstly I love watching your videos..so inspirational. But I noticed you eat quite a lot of rice...I recently learned that rice production is not at all good for the environment and the rice plants give off methane gas (I think). I was quite shocked and have significantly reduced my rice consumption since learning that. I just wondered if you were aware of that as I don't think it's widely discussed x
