Tired of the boring omelette? Here's a special egg recipe that's very popular in Chinese/Cantonese cuisine. Be creative! You can add any protein or vegetable you like and customize your Egg Foo Yong!
Crab and Shrimp Egg Foo Yong 芙蓉蛋
Ingredients (Serves 8)
Set A: Sauce
4 tsp cornstarch
1 1/2 tbsp light soy sauce
2 tsp oyster sauce
1 tbsp Chinese cooking wine (Shaoxing wine) or mirin
1/2 tsp sesame oil
1 cup (250ml) water
dash of white pepper
1 tsp sugar
Set B: Egg Mixture
6 eggs
1 tsp light soy sauce
1/2 tbsp sugar
1 tsp oil
1 tsp Chinese cooking wine (Shaoxing wine)
1/2 tsp white pepper
cornstarch slurry ( 2 tsp cornstarch + 1 tbsp water)
Set C: Add-Ins
6pcs shrimps, peeled (can cut into halves)
1 cup crab meat
2pcs shiitake mushrooms, rehydrated & sliced to thin strips
1 cup beansprouts (togue)
4 stalks spring onions (white parts sliced, green parts minced for garnish)
3 garlic cloves, finely minced
1/2 cup onion, julienned
*Note: For best results, cook this dish in a wok
