Crafting floral jelly cakes with former Malaysian architect turned 3D dessert artist

Malaysian-born Siamy Tan got hooked on 3D jelly cake design in May 2022, when she attended her first class on the traditional art of jelly cake making in her hometown of Penang. Using just agar-agar powder, natural food colouring and specialised syringe needles, Tan quickly mastered the art of crafting realistic looking flower bouquets using jelly cake as the canvas.The qualified architect then began offering classes through a Malaysian Facebook group, and her cakes have since grown a following on Instagram. Tan shows the Post’s Regina de Luna how she creates lifelike blooms, one petal at a time.

When I was a kid, my mom used to make agar agar cakes instead of Jello. They were great! I miss them and my mom very much. Sadly my mom passed back in 1999.

I ate a jelly just like this at my friend's Raya open house. It was so sad that we had to cut and eat such beautiful masterpiece. It was really delicious as well.

Agar2 has been here for decades n I used to always eat this as a kid. Almost every homemade jelly in Malaysian household uses Agar2 for jelly. We've never used gelatin

Agar agar has been around South East Asia for decades. Our food also mostly plant based as well. Try vegan diet using Indonesian style food, some of them not healthy at all :))

Pig fat isn’t used to make jelly. It’s produced from gelatin, which is made by boiling skin, bones, tendons, and other parts of pork or bull. Furthermore, gelatin is derived from collagen, a protein, rather than fat.i love jelloo

In microbiology, Agar-agar* is used for making bacterial colonies, soft agar where it's concentration is 0.2-0.3% is used for identification of motility of bacteria and high concentration around 5% is used for proper bacterial colony culture.

So what you're saying is that if yeast were added you could get suspended bubbles in the gel... and let to sit even longer one could get bubbles and some kind of wine-like jelly. 🍷

@@warlockpaladin2261 yes, in the simple words, actually we modify Agar-agar for the yeast, here we use Sabouraud glucose neopeptone agar( pH 5.4), Czapek-Dox medium, Bird seed agar, Corn meal agar. As yeast likes lower pH, aerobic environment, and they better grow at temperature of 25-35 degree Celsius.
