I steam and then bake fresh cauliflower. While baking I throw on whatever cheese I am in the mood for. I am allergic to milk so I have used unsweetened soy milk creamer to increase the amount of sauce that naturally occurs with the melted cheese. And, I cannot eat wheat so I use a gluten free pasta [they taste so much better than years ago]. After watching this, I will add in garlic next time as shown and I will bake some onions too. I loved oven baked vegetables.

fantastic! I might try to incorporate this cauliflower white sauce into my next mac and cheese to lighten it up and add a bit of health. Blend the cauliflower, leek, and milk in a blender to make it smooth, then add to my roux with the cheeses before mixing in the noodles, and baking. I love classic mac but I'm always looking for ways to add more vegetables into my meals!

The only reason he produced the video is to feature that pan as an advertisement. And he gets a new one for each recipe, judging from the way he treats them. He uses potato masher directly in the pan, metal tongs, BLENDER, ... .

I made this today, I was really nice, though one little thing, I wish the sauce stayed runnier for longer. Not sure if there's a way, It was nice in the pan on its own, but when I added the pasta, within just a minute it started going thick and stodgy. I did add a bit extra pasta water initially also.
