Fairly new to jazz here, but it seems to me that it would be more appropriate to use Arabic numerals (1, 2, 3, etc.) instead of Roman numerals (I, ii, iii, etc.) when identifying chord tones. I thought that the capital and lowercase Roman numerals were supposed to be used in identifying chords and chord qualities, not individual pitches. Is this not the case? (I do love the video, though. Thank you for making it.)

You use 1 3 5 7 etc. instead, yes. You do the same thing you'd do when writing out chords, so like a 7b9b13 chord should be written 1 3 5 b7 b9 b13 in intervals.
