It was a privilege to go around my garden with Chantelle Nicholson. She felt at home here because she buys seasonal, organic vegetables, and her restaurant in London just won a Michelin Green star.
First step was to check out the potential harvests of vegetables, flowers and herbs. Next, we lit the barbecues and she created delicious dishes with rich flavour combinations - see her recipes here.
Video timings are further down
RECIPES by Chantelle
Smacked cucumber, roast garlic, rhubarb
1 cucumber
2 tbsp sesame oil
1 tsp Sherry vinegar
Salt
2 bulbs garlic, roasted or BBQ’d until soft
4 sprigs tarragon
Szechuan pepper leaves
6cm stick rhubarb, finely diced
Take the whole cucumber and, using a blunt instrument, lightly bash until you can feel the cucumber give. Cut in half lengthways then, using a knife, cut diagonal lines to criss-cross the cucumber, approximately 4 mm from the skin.
Sprinkle the cucumber with salt. Splash over a little Sherry vinegar then drizzle over the sesame oil.
Peel the garlic and chop the flesh. Pop this on top of the cucumber. Top with the diced rhubarb & picked tarragon. Garnish with the Szechuan leaves.
Pea, broad bean & courgette salad
8 broad bean pods
handful of sugar snap peas
3 small courgettes
8 leaves mint
small handful dill
small handful blackcurrants
Courgette or squash blossoms
3 tbsp rapeseed oil
1 tsp sherry vinegar
1 tsp Dijon mustard
Pop the broad beans onto the BBQ and char well on each side, cooking for approximately 8-10 minutes to ensure the beans are cooked through.
Finely slice the sugar snap peas. Cut the courgettes in half, lengthways, then finely slice. Chop the mint leaves and dill then pop everything in a bowl. Add the blackcurrants and lightly crush with your hands.
Mix the oil, vinegar and mustard together in a small bowl then add to the above. Season with salt to taste.
Squish the broad beans out of their pods into the salad. Stuff into courgette or squash blossoms.
Potato & Chard salad
1 medium sized potato
6 chard leaves
1 red chilli
1 tsp miso paste
1 tbsp sherry vinegar
2 tbsp rapeseed oil
Spiralise the potato and rinse in cold water. Drain off and pop in a dish. Add the finely chopped chilli then splash over the Sherry vinegar and season with a touch of salt. Leave to sit.
Cut the stems off the chard leaves. Drizzle with a little oil and season with salt then BBQ until cooked through.
Finely slice the chard leaves and pop in a bowl.
Pop the miso and oil in a bowl, with a couple of spoonfuls of cold water. Whisk.
Once the chard stems are cooked, chop and add to the leaves. Add the potato and the dressing and mix well.
Miso Broccoli & Spring Onions
1 head broccoli, quartered
8 spring onions
2 tbsp rapeseed oil
For the dressing:
1 tbsp miso paste
2 tbsp sesame oil
1 tsp Dijon mustard
1 tsp sherry vinegar
2 tbsp water
Whisk all the ingredients for the dressing together.
Drizzle the rapeseed oil over the broccoli and onions and season with salt. BBQ to cook through then drizzle with the miso dressing.

Lol. 7 year old me arrived home from school to find mother not arrived back. It felt like a long wait and the only "food" available was a sack of potatoes dressed in their dirt. I ate one like an apple. Mother opened the door to find me, dirt smeared face and "guilty" of eating raw spud. I'm sure it did my gut biome the world of good!😊

Hi Charles, I understand it’s not easy to chefs to come to you that often, but this kind of video is what I would watch every month if you could. I’m limiting myself to grow what I know how to cook, but having someone going around the garden collecting veg and making meals with what’s available is what I’d love to see more often. Thank you for everything you doing. 😊

Wow, totally surprised at how she prepared everything. What a unique take on combination and preparation. Very interesting. I think everyone who grows their own food is looking for different ways to prepare it. The rhubarb leaf does help to lure the pests away from other plants and the rhubarb itself. I always scatter the leaves around after a harvest. Plus it adds nutrients back into the soil as it degrades.

Hi Charles, I noticed some black material covering the soil where the squashes are growing. Question, do you lay plastic so that the squashes grow without touching the soil (avoid rotten)? I ask because I had this issue with my pumpkins last year, they have rotten from picking up moisture from the ground so I had been wondering how to deal with this next season. Would love to hear your approach. Daniela from Australia.
@CharlesDowding1nodig
@CharlesDowding1nodig 9 ай бұрын
Thanks for your comment Daniela and that piece of black plastic is to smother weeds because just four months earlier it had been a weedy block of pasture, growing very strongly. It works well to make a few holes and plant squash into the compost and soil below the plastic. I actually find with winter squash that they survive nicely even on wet plastic, or soil, without any support under them. Pumpkins maybe are softer skinned.

Wonderful video thank you so much for sharing Chantel with us, very inspiring. I too graze through my garden every morning and harvest whatever is ripe and ready that then goes on my barbecue for brunch or lunch. Most of my Harvest rarely makes it into the house. I even do my canning outside on the barbecue so all of the abundance goes right into the jars. I love making prepared meals add the meat and veg goes right into the jars and into the pressure canner. I made a lamb Curry and vegetables recently that is so good it's through the roof. Next time I can carrots I'm going to throw in some of the tops. I wonder how pickled beets with the tops would taste. I'm going to have to try some of zucchini flowers raw I usually stuff and cook them. I'm going to have to go back in the video to see what exactly she added to the cucumbers. Cucumbers particularly lemon cucumbers mixed with cherry tomatoes cut in half soaked in rice wine vinegar for a few hours is one of my absolute favorite summer treats.

I love raw potato and a little bit of salt on it is great but it's good with or without. My dogs love it too. I'm thinking about grilling some cabbage steaks today. Love cabbage.

This was such a fun episode. I love them all, don't get me wrong, but I totally cook like this in the summer, though with far less panache! It was great to see such kitchen creativity and simplicity all at once! I am inspired!

This was amazing. Esp. all the odd bits of knowledge and questions, ideas etc. that came up as you walked the garden ! Raw potatoes - yes, when I was very young my teenage aunts, who lived next door ( up the road, on the main farm property w my Grandma, here in Wisconsin, USA on a dairy farm my folks run today), helped my grandma in their large garden and introduced us to snacking on a fresh, raw potato. Sliced up and sprinkled w salt n pepper. Delicious ! Years later, when she had a garden of own again on their Arizona property, her own children were astonished that one could ( or WOULD) eat a raw potato, and also enjoyed it.

I recently put a rhubarb leaf and stalk next to my tomatoes that were getting attacked by snails and they all clustered towards the rhubarb stalk making it very easy for me to relocate them. There were loads of them on it. So many that I was very tempted to pick them and start a snail farm so that I could have Escargo UK style
