I've been making these potatoes for several years now, but never thought of doing them in the instant pot! We always baked them. This just makes it even easier. Love these......especially dipped in sour cream!

I had a local grocery store deliver some groceries a couple of days ago during the COVID-19 self-isolation! I did not order 5 pounds of red potatoes (they are larger than the baby reds) and the store told me they were not interested in me sending them the money for them!! Gifted!! Yay - well, I love potatoes but I am single and no one else seems to want some of them so I have been searching out various recipes to use them up. This sounds so good and a nice way to change up my regular ways with potatoes. I think they would be great with chopped chive which I have in my garden and possibly some cooked chopped bacon bits.!

Hi Flo, just a suggestion. If I make a garlic butter dressing the way you have I find the garlic a little acidic. What I do is just simmer the garlic for a couple of mins (in water) and it takes away that acidity and leaves it sweeter.Good vid though. John M (in the UK)

I don't have a lot of fancy kitchen gadgets, nor the budget to buy them... but it looks as though your Instant Pot could be effectively substituted by a double boiler (simple steamer with a lid over a pot of boiling water). Do you think this would make a good substitute, given that I don't want to buy an Instant Pot?
