Osaka has been pretty low, but who knows, maybe it'll go up once the weather starts to dip down again. So looks like I'll be here churning out more recipes! It's crunch time! Lol I love this video, just found this channel but you seem like such a fun creator! I have tried making my pancake with a prepackaged dry mix that wet ingredients are added to but I've had such a hard time making it crispy

I will be adding your special ingredient Miso to my kimchi pancake today! I am looking forward to it. Soya sauce use to my secret ingredient in every dish (I have a soya sauce collection lol) but now I am hooked on using Miso after I tried it with my lasagne. It was part of Marion's recipe from Marion's Kitchen, I love her cooking! Sometimes she uses unconventional ingredients to traditional recipes and that's exciting! I am sorry some people went after you for your creativity. People should really try things before they knock it. And I love your channel!

There is this place I use to go to afterwork for Sake and some side foods and my fave was the kimchi pancake. It was soooooo crispy and I loved it. Sadly the place closed down and I could never find another place who made it the same way..it was always too soft… I tried making it a few times and still could get that crunch I wanted…I will try recipe now! I’m excited

@@StraightUpEats so sweet that you remembered 🥰 I'll try it, for sure, especially when it seems to be so meccha oishi crunchy... Oh oui ! When I ate these Korean pancakes in Japan they were always soft or a bit soggy, so you definitely convinced me to try your recipe ! Can I add hot oil chilis in the batter? Mrs. Eats is really lucky to have such a great chef at home 😊 I'm doing well but I must admit that I miss Japan badly on these days, as if a big part of my heart was left over there...! Hope to be back in Osaka in mid October, I actually can only cross my fingers and pray 🙏🏾

Yes, typically these pancakes are not very crispy at all, actually. When I first had them at a Korean restaurant in the U.S., it was SUPER crunchy and delicious, but when I ate the ones in Korea, they were not crispy, unless you ate them right off of the griddle, but even then, they'd only be crispy for the first 30 seconds or so. This is definitely not a traditional method of making them, but I wanted to prioritize the crunch over everything else! Yes, I don't see why you can't add some hot chili oil, maybe into the batter! In that case, I would reduce the amount of oil that use to cook with! At least just enough so that it still produces a good crunch, but without feeling too oily and heavy. Yes, Mrs. Eats is very lucky! But also unlucky because it's too easy to gain weight, since we can't go outside, haha! Oh, I know what you mean, Sakura! Even though I live here, I feel like I"m not actually IN Japan, if that makes sense. We just stay home all the time and only go out to buy groceries. I miss going out and seeing the city, the temples, the cool sightseeing spots, and of course, all the delicious street food! Hopefully when you can make it in October! If our schedules line up, we'd love to meet up with you and finally get a chance to hang out in person!

Absolutely lovely. I just made mine and it delicious. It was very crispy. BUT THE TASTE OF THE KIMCHI WAS GONE, EVEN THE PEPPERY TASTE. BUT SUITED MY PLALET AS A MIXED JAMAICAN EUROPEAN

Ahhh thats really cool, I never thought of using a different technique to make it like that! I’ve always just seen my mom and other ajummas just cook a batter that’s already pre-combined with the said veggies. Kinda reminds me of hiroshima-style okonomiyaki. I think you add on the additional toppings after laying down the cabbage batter mix as a base.

It’s crunch time!! And you really caught crap on reddit for using a little fusion - aka- just cooking your own stuff? 🙄 So I found your recipe with an idea in mind that would cause me to have to sit in a korean corner if miso bothers them- I was thinking of making corn cakes with chopped kimchi in them 😂 If I stuck to rules, I’d never have learned to make kimchi to begin with- so I couldn’t have learned to make my own recipes like kimchi fried dumplings 🥟- not kimchi IN the dumpling but in the simmering water with other seasonings- ahamzing! Or I’d not learned to make kimchi fried rice but with the insides of the dumplings fried up and the outer shell used as crispy fried toppings!

Now THAT sounds amazing! Throw some shredded cheese in there and you've just made the next viral street food! And you gotta stop it with the kimchi fried dumplings and kimchi fried rice; all of those sound super good! Also, genius tip on using the shell as a crispy fried topping for fried rice! Yes, a lot of people forget that many of the foods we deem to be "classic" were made by accident or by experimentation like chocolate chip cookies, potato chips, and ice cream cones! IT'S CRUNCH TIME! YES, yes , yes Hi Ken ,Omg I just started learning to make kimchi, so happy to get this recipe yay, to tell the I've been taking Asian cooking classes online live, so much fun. This was my test assignment kimchi and let me tell you ! I botched the whole darn dish 🙄 so to take matters in my own hands! I as smart as I am went to my local Korean market and bought my kimchi yay me 😉anyway I so love your humor as always you always make me laugh thanks so much. please keep it coming. Ken are you planning on doing any livestream? Or is it safe to do so?Tell Mrs Eats I said hello she is so beautiful. Wish I can show you my food creation as well. Elvina! Thanks for stopping by! 😊 That's so cool to hear that you're making your own kimchi! It's kind of difficult to make, having to salt each leaf! But don't worry, making it is kind of difficult, especially if you've never pickled things before! The first time I made it, I was kind of scared to eat it because I didn't want to give myself food poisoning, hehe! I'm curious, how did you botch it? Oh that's great that you have a Korean grocery store nearby! Is it an H-Mart? I love those places! Don't worry, I"m sure you'll get it right next time! Also, that's great that you're taking the Asian cooking class online! Is it difficult to follow along? Are they live lessons, or do you watch videos and follow along? I'm so curious to hear about it! Also, thumbs up for freedom Kimchi pancakes, lolol! And yes, you can definitely add shrimp! I would use pre-cooked shrimp and add them into the center of the pancake! We would like to do some livestreams again, definitely! We're not sure when we want to start them up again, but maybe once things calm down a bit, we can start going out. We haven't been into the city in months, so it would be nice to go out there and see what it's like these days. Thankfully the virus situation isn't too bad in the Osaka area, so hopefully we'll be out sooner than later!

Ready? of all things in this great universe of food I Elvina forgot the...are sitting down for this Ken? Ok here goes, The "SALT" who does that!?! Me.😵how embarrassing 😕 my assignment was to remember all the ingredients without writing it or cheating! Well you know I didn't cheat 🙂😀 because it was awful I really had to laugh at myself. But anyway I'm remaking it today. @@elvinawashington910 Hahah! What a story, Elvina! So you had a jar of chilies and cabbage? Hey, that's not too bad! Sounds like you may be able to use it in a stir fry! Also, you have to REMEMBER the recipe without writing or cheating? That's just plain DIFFICULT! I can't even recall all the ingredients for kimchi off the top of my head! It's okay, I'm sure your next batch is going to be awesome! Oh by the way, most kimchi recipes call for immediate fermentation after adding the chili pastes, but you can actually eat it right after adding the chili paste! In Japan, most kimchi is enjoyed this way, as Japanese people don't like the strong sourness from fermented kimchi. You might want to keep a small batch of your kimchi in the fridge so you can try it "fresh", while the rest of it ferments! It's a great way to enjoy two kinds of tastes from one batch of kimchi! Don't worry Elvina! I'm on the lookout for some easy Japanese chocolate recipes! We'll definitely be safe, so make sure you're taking care of yourself!

Yes classes are really live it's a lot of fun there's like ten of us and we're in our kitchens so we see everyone it's really fun. Hi idaddict, thanks for the question! I haven't made it without club soda, and honestly, it's only there to interact with the baking soda, which will make it bubble and give a bit more levity to the final pancake. If you would like to substitute water instead of the club soda, then I'd suggest switching from baking soda to baking powder. I don't know the exact ratio, but I would say to use the same amount of baking powder as baking soda. I will say this though: someone mentioned that they just replaced the club soda with water and left everything the same and it came out fine, so there's that! I can't comment on the validity of the final product, but it's worth noting!

@@StraightUpEats Hi. Thank you so much for taking the time to reply my question. Anyway, I tried it with ICED water and it worked fine. The amount and proper temperature of oil is also crucial to make it work. Having said that, I still will try it with the club soda as I'm pretty sure it would really be a notch better with just plain cold water. Thank you and more power to your channel. Off I go to grab my napa cabbage to make more kimchi :)

Hi Dena! I'm not sure, but the culprit might be too much baking soda. Too much in your food can give it an acrid taste. Did you use the amount listed or did you eyeball it?

This is not a pancake. It's Jeon(전) or called Boochimgae (부침개), Kimchi Jeon or Kimchi boochimgae. It has the name. Respect other culture please.
