Findus crispy pancakes. That really is nostalgia. I used to love the cheese and ham ones with proper home made chips (deep-fried in the battered old chip pan) and peas. 😊

One of the things I like about your posts is you show cooking and producing scrummy meals in normal circumstances, like during your lunch hour or when you come in after work, because that’s reality for most of us. The glamorous Chefs in glamorous kitchens with people to help produce them have their place, nice to watch, you show it how it is for a lot of us, another lovely meal 😊😊

For those who aren’t old enough to remember Findus crispy pancakes this is a pretty accurate recreation of the original product except that they were much smaller. For those who are too lazy to make their own, they have in fact quietly been re-launched in a couple of versions and are available from both Asda and Morrisons, or at least they are around where I live (West Yorkshire). I don’t remember what company are making them but they are in the freezers. My favourite back in the day was the chicken and bacon variety.

Never seen these before, but looked very good,I only remember crepes on Shrove Tuesday with lemon, and sugar.Interesting how the World over people make these sort of turnovers with different fillings, and different holders, puff pastry, tortillas, short crust pastry, even rolled out pieces of bread, then filled, crepes, and all delicious.I think flour tortillas could be breaded like this,if you didn’t have time to make crepes.Crepes can be stacked, and refrigerated,or frozen,I made a lot at one time in my job,and filled them over a few days, just sweet fillings.Plantain flour makes nice pancakes,I filled with caramelized bananas, and brushed them with chocolate, rum ice cream is good with them.😊

To brown the mince - don’t break it up; it’s just a myth. The reason for browning mince is the get flavour from the Maillard reaction but if you break it up, you can’t get the Maillard effect without destroying the mince because of the small grind size. Keep the mince in a block and fry as you would a burger, add weight like a burger press or plate with a can on top to push the frying surface into the pan to char the meat. When really caramelised, flip the patty over and do the same giving two charred surfaces with a moist interior. That’s how to introduce Maillard, it isn’t by greying the meat as you’ve done in this video. THEN break it up and fry but not so much it’s dry. In the video, you’ve driven off the moisture but simply replaced it later. Pointless. Great recipe though, will certainly try this 👍👍👍 A flour/water slurry will stick the edges better than egg.
