Crispy Schezwan Vegetables:
Schezwan Sauce :
Kashmiri Dry Red Chilli (Deseeded) - 8 nos
Water - As Needed + 1 Cup + ½ Cup
Oil - 2 tbsp
Garlic - 1 tbsp
Ginger - 1 inch
Coriander Stem (finely chopped) - 2 tbsp
Soy Sauce - 1 tbsp
Tomato Ketchup - ¼ tsp
Other Ingredients :
Carrot (Batons) - 2 nos
Broccoli (florets) - 1 Cup
Cauliflower (florets) - ½ Cup
Beans (diced) - ½ Cup
Capsicum(diced) - 2 nos
Maida - ½ Cup
Cornflour - 1 Cup
Salt - ½ tsp + ½ tsp
Sugar - ¼ tsp
Black pepper Powder - ¼ tsp + ¼ tsp
MSG (optional) - ¼ tsp
Oil - For Deep Frying
Cooking Instructions:
1. Heat water in a pan and add the de-seeded chillies to it. Boil the chillies for 5 minutes. Strain the chillies and blend it to a fine paste. Keep it aside.
2. In a bowl, make a batter with maida, cornflour, salt, pepper, msg and water.
3. Add the vegetables to the batter and mix it till the vegetables are coated well with the batter.
4. Heat oil in a pan and deep fry the batter coated vegetables till they become crispy. Keep it aside.
5. To prepare the sauce, heat oil in a wok, add garlic, ginger and saute it for a few seconds.
6. Add coriander stem and fry it for a few seconds.
7. Add the chilli paste and cook it till oil separates from it.
8. Add soy sauce, tomato ketchup and mix it well.
9. Add a little water, mix it, bring it to a boil and let it thicken.
10. Add the fried vegetables and toss it on a high flame till it is coated well with the sauce.
11. Take it off the flame and serve it immediately, garnished with chopped spring onions.
