To keep the pollen and stigma dry so you can use the pollen to pollinate the stigma. Some varieties will not set fruit with moist pollen. So it's best to bag them on days that it'll rain. For example today it says 67% rain. So I'll bag anything that looks like it'll open before I leave for work.
