Today is a traditional Austrian cake~!!
I made a Sacher Torte.
Sacher Torte is a rich chocolate cake covered with apricot jam and coated with chocolate.
This cake, which seems to be very sweet until you eat it, is not very sweet when you eat it.
The chocolate and apricot jam make a great match.
It's easy to make .
Some of the recipes published by Hotel Sacher have been baking for quite some time, but this cake is a little less baked than that. So it's moist.
And almond flour is used to add a savory taste, but if you don't have almond flour, you can substitute flour.
The glaze applied on the outside was made without gelatin.
It is a cake that will satisfy even those who do not like gelatin.
A really delicious chocolate cake that reminds me of a cup of coffee~!

● Chocolate Cake
( Mold Size : 18cm )
95 g (1/2 cup) unsalted butter
30g sugar powder (3 Tbsp + 1/2 Tbsp)
5ml (1tsp) vanilla extract
A pinch of salt
Yolk 4
90 g dark chocolate (1/2 cup-melted)
4 Egg white
55 g (1/4 cup) sugar
75 g (1/2 cup) all-purpose flour
20g Almond powder (can be replaced by gravity flour)
● Chocolate Mirror Glaze
150g Dark Chocolate Coverture (3/4 cup + 1 Tbsp-melted)
150 g (1/2 cup + 2 Tbsp) heavy cream
10 g (2 tsp) unsalted butter
200g apricot jam
● Syrup (Use if necessary)
50 g water (3 tablespoons + 1 teaspoon)
35 g (3 tablespoons) sugar
5ml rum (1tsp)
