The natural lemony zing of these cupcakes works so well with the delicious blueberry buttercream icing, and you can even fill them with lemon curd if you want to go all out! They're one of our favourite cupcakes and the best part is that gorgeous colour is all natural from the fantastic blueberries! For the Blueberry Goo:
100g Blueberry's
40g Caster Sugar
Squeeze Lemon Juice
For the Lemon Sponge:
125g Unsalted Butter
125g SR Flour
125g Caster Sugar
1/4 tsp Bicarb of Soda
Zest of 2 Lemons
2 Eggs
2 tbsp Lemon Juice
For the Blueberry Icing:
200g Soft Unsalted Butter
320g Icing Sugar
3-4 tbsp of your Blueberry Goo

Fairly new to these videos but I have to say my baking has improved 100% I used to put more butter in to stop them drying out but now stuck to the recipe and beat the mixture until it’s light and fluffy and omg what a difference thank you so much, everything you make looks amazing why are you so slim 😆

Well how about that! I was just looking for a lemon cupcake as well as a way to use my blueberries that I picked a couple weeks ago! We just finished blueberry season here in lovely New England USA 🤤 A winning combination ❤️ I made the blueberry goo and the cupcakes last night! I made my lemon curd last week so I now have a way to finish it off😊 Wow, the goo tastes AMAZING!!! Hello Sally (or Jemma!) I made these cupcakes today, they are absolutely delicious! The sponge is super soft, and the blueberry icing is delicious! I decided not to fill them with lemon curd, because 1. I’m lazy 😂 and 2. I thought it might be too “saucy” or wet with all the different components. To make up for the loss of lemons, I added the juice of 1 and 1/2 lemons into the batter, and the zest of 2 lemons! (The other half of lemon juice went into the blueberry jam.) And it was the perfect balance of lemon and blueberry! The blueberry jam is delicious by itself, but I decided to add all of it into the buttercream for maximum blueberry flavour. I think I cooked the blueberry jam for too long as it became extremely thick and jammy, so I decided not to strain it at it was fine! I do have to say though, that the icing is very rich and kind of sickly. It would have been nicer with a more lighter icing, instead of a heavy one like buttercream.

Saw the video and immediately made the grocery list. I made them even with the lemon curd and they are sooo good ! I am not a big fan of American buttercream but I think in this case, it complements quite well the tanginess of the lemon curd. Will do the again for sure 🙌🏻🙌🏻

With the house in Portugal we had a lemon tree 🍋 , I think I made a dessert with 8 lemons. Even thou blueberry is a superfood. I think I would have a completely lemon cupcake 🧁. I thought you would soak them like a lemon drizzle and candied lemon. I love that you fill them with lemon curd. I have been wanting to do like a earl grey smoked sponge with a smoking gun. Everything always looks amazing.

These look amazing! The frosting though reminds me of a baking disaster I had a few years back - I wanted to color my frosting red, and the client said they wanted a fruity red not food color red. So I made raspberry goo, really thick like Sally’s here, put it in, mixed it with the frosting and... zero color. Not even a teensy touch of pink. And I added a LOT of the goo. Til today I have no idea why lol!
