Dairy Free Lemon Meringue powder buttercream
Ingredients
74g granulated sugar
30g boiled water
25g Fresh lemon juice
14g Meringue powder - (I used Culpitt Meri white)
225g icing sugar/confectioners' sugar
225g Plant based Salted butter
4g Lemon zest (or more if you prefer an intense lemon flavour)
1 teaspoon Vanilla extract
This is a Dairy free version of my popular meringue powder buttercream. I’ve been making a lot of dairy free cakes of late so I thought I’d share a lemon buttercream frosting recipe I made.
I used Flora plant based salted butter, I personally think it turned out really nice for a dairy free alternative.
So smooth and lemony - you can add more lemon zest if you would like to make it to your taste.
It’s a stable buttercream, that pipes beautifully.
