'Butchery' is the proper name for a place where a 'butcher' works (French/latin origin). It also is used to denote wanton killings in a particular place, and at some point the focus of the label shifted from the artisan trade to crimes against humanity. Funny thing that in Arabic, they used to use 'Majzara' the same way to refer to a place where animals are slaughtered and their meat is prepared for sale or consumption, but also refer to wanton killings (ie spilling of blood en mass) so in the Middle East they use 'Malhama' to refer to a butcher's shop (the same word is also used for epic/saga like Epic of Gilgamesh, so in arabic would be 'Malhamat Gilgamish').

I'm pretty sure "Butchery" is a valid name for it, but most people call it a Butcher's. It could also be that it's a butchering place that doesn't sell to the public, so not a butcher's shop per se
