I made these rolls using your recipe exactly. They were excellent! I'm new to breadmaking so was thrilled with the results. The Amylase enzyme really makes a difference.

Lived in South Philly, 4 blocks from Pat's & Geno's for almost 15 years and never heard a cheese steak called a cheezer. Don't stress about ordering the "right" way, the key is to know what you want so you don't hold up the line. Mike, your sandwich looks great!

Ohhh! I went to Pat's when I was in Philly a few years ago. Being used to dry, sad cheesesteaks elsewhere, having the real deal was like a religious experience. I need to go back to Philadelphia someday to hunt down yet more cheesesteaks.

Watched this 10 month ago first time. KZfaq just recommended again. rewatched. I had a pretty adictive relationship to my new all time favorite sandwich at first. Now eating them just once a month. I am livin in germany. Not to hard to find rolls like this here. Cheese same story. One small own style i developed is to lay the roll over the meat and cheese for a minute instead usiing a lid. Givin the bread a slight roast on the edges and warms it up. Also the cheese glues the meat and roll even stronger together over the time it melts. So the handling in the hot pan is a bit easier for me. TY so much for sharing this amazing sandwich with us. Else I probably would ve never heard of it over here in europe

You want some cheesesteak history? Here ya go! The original steak sandwich was invented in 1930 by a hot dog stand vendor in Philadelphia named Pat Olivieri. One day he sent his father to the local butcher for some Ribeye trimmings and decided to make a sandwich out of them with grilled onions on a roll. A cab driver who ate hot dogs everyday asked to try one and said "forget hot dogs, you need to start making these". Sometime later in the 1940's "Cocky Joe" Lorenzo, a drunk employee of Pat's, decided to put provolone on his steak sandwich and the cheesesteak was born. In 1953 Cheese Wiz was invented and Pat Olivieri said this is tasty and cheap and decided to offer it as an option to put on his cheesesteaks. Putting peppers on a cheesesteak is an abomination.

@@Junglehunter677 no provolone or American cheese (American cheese in Philly cheesesteaks are not yellow or taste fake) and don't USE KETCHUP I'm from Philly that is disrespectful:C You just say a Philly cheesesteak and usually they get you one with American cheese and goodness but you can ask for something else Franks shakes and steaks are the best ones to get in my opinion and others most reviewed one in my area. Also in Philly, we don't call it Philly cheesesteak it's just a cheesesteak because we are already in Philly. k bye now

Towards Allentown they will serve the steak caramelized with (tomato) “sauce”. Since you add the ketchup you might try that way, very good!

They call it valley style(Lehigh valley) and you get marinara and usually mushrooms onions and hot/mild/sweet peppers. Usually provolone. Better than Philly by far! Don't use ketchup you fuckin kooks

From Philly just wanted to share some thoughts: 1. That cheesesteak looks amazing! 2. Pats and Genos, the two most famous spots in Philly, are both pretty bad and are tourist traps 3. Jims is definitely better than Pats and Genos and a solid spot to go 4. If you want the best cheesesteak you gotta hit up Delassandros

SundayMatinee I’m from philly as well and I personally eat my steaks with ketchup. Either way is fine, anyone tryna be a purist about fucking ketchup is just gatekeeping. There are a few things integral to a cheesesteak and choice of sauce is not one of them.

I just found your channel last night and watched a few of your newer videos. I'm from Philly. This video came up as recommended and I just thought, "oh boy, another New Yorker trying to make a Philly Cheesesteak". Very cool that you are from Philly - Even cooler the way you did this justice. The original video you showed in the beginning with the toasted roll and the green peppers is just wrong, haha. Any time I go on vacation anywhere and I see a place with a "Philly Cheesesteak" on the menu, it's always hilarious to see how they make it. And even if they made it right (they never do), they don't have the Amaroso's rolls. I was so pleasantly surprised and amazed to see how well you were able to replicate the Amaroso's roll. It looked amazing. I've literally never baked bread before, but I want to try this so bad. I kinda wish you would have used wiz if not just for Philly consistency sake, but I do appreciate the great Philly culture segment you had as well (ordering a steak in Philly is no joke). You made a real Philly steak, and I love the work you put into this. Thanks for the best Philly steak video on KZfaq.

This is a legit recipe. Jim's is the best. as a former philly resident of 6 years, you can put ketchup on if you want. Every place and food truck will offer "salt, pepper, ketchup" and often hot sauce after serving it up.

As always, a very respectful video. Like, look at him giving compliments to Philadelphians(? sry I'm not native English speaker), to Italians, to the company that makes the bread, to his butcher. This is serious. I remember the story of a particular NYC bagel shop that opened a store out in LA. They made the bagels fresh using the same recipe and everything, but try and try as they might, there was something off about the bagels. After much experimentation, they discovered it was the water. California water has a different taste to it than NY water. In order to get that NY bagel taste, they had to fly water from NYC out to LA, because the California water didn't provide that same taste. And I know, I know, "What? Water doesn't have a taste. It's water." Yeah, try drinking tap water in Florida, then come back and say that. Yes, I know, it's not the actual water itself but what's inside the water from the purification process. Point is, water from the tap can taste drastically different regionally, and that can affect the outcome of food that uses water, especially in baking.

So I know this is video is over a year old, but I had never really heard about directly adding amylase to bread dough until watching this video. This makes PERFECT sense to me as a homebrewer where we deal with controlling the activation and viability of alpha and beta amylase as a part of the mashing process to convert starches into fermentable sugars. The fact you can straight up purchase these enzymes for use in things like bread making just blew my flipping mind.

uk popular sandwich, egg and bacon ,straight out the pan, 1 more, try sliced bread fried, it has to be very brown , we have it with bacon egg mushrooms tomatoes on a plate, pre book a cardio test if you eat it regular

Everytime i make cheesesteack i always put my meat on a super hot pan for less than a minutes to give it some intense color without cooking it all the way, then i put my almost done onions in, turn te heat low, shape it and put the cheese. The time it take for the cheese to melt will be enough for the onions and the meat to be perfect. I think the meat brownage really makes the final product better.

Great rolls! Only 2 things I do differently. One, sear the meat whole then remove, chop, and add back in. Second, melt the provolone and chop it into the meat so the whole thing is cheesy in every bite. Most importantly eliminate as much grease as possible.

Hey! Tri-State native here. Liscio's Bakery is literally right around the corner from me. FYI, most of the philly cheesesteaks places are getting their bread from bakeries in South Jersey like Liscio's Bakery. To be honest, today South Jersey is far more Italian population then I see in PA. I remember when I was young going with my Mother (fully Italian family) to get fresh bread from Del Buono’s Bakery, especially early in the AM on weekends. Right out of the oven on the conveyor. AMAZING. I haven't been there in a decade since the owners changed (sold in 2013 to Tom Whitman from Constantino “Nino” Del Buono), but I'm sure they are still amazing considering they use the same recipes a they did then. The history is amazing tbh, they've been there since 1926. True Italian roots. Makes me think about my grandfather and mother. FYI, Amoroso's also began in New Jersey and not Philly. Personally, Amoroso's isn't as good anymore. Like Pats and Genos, they are living off a name. Liscio's is better and that's why so many places have switched. Sarcone's is really good as well, in PA and been there since the early 1900's. Those that are near Atlantic City, try Formica's. Also, I'm sure all the Philly people will get their panties in a bunch, but South Jersey makes better (and more consistently good) cheesesteaks. Sorry.

I’m also from Philly I have 6 cheesesteak shops i always get people telling me “WHERE’S THE PEPPERS & MUSHROOMS?” Thats a corporate trick used to add more filler and less (expensive) steak! A cheesesteak is Ribeye grilled onions with American, Most people get there’s with mayo or ketchup or tomatoes and pickles in my experience!

If you are familiar with the channel and this series, you know what high standards of quality are used to make these sandwiches and guests from KZfaq like Alex the French Guy have visited and approved. That being said, everyone has their own individual tastes and if someone wants to use ketchup on their sandwich or mayo on their fries who are we to judge?

He's right that the people taking your order for a cheesesteak can have a serious attitude ... but who cares what they think. Let them make faces. All this proper ordering cadence is just BS. If you say "cheesesteak with onions" instead of "one with" ... they'll figure it out. Order any way you want --- don't be intimidated by some rude jerkoff in a window.

I'm not saying to be that doofus who doesn't know what he wants when he gets up to the window (that makes us Bostonian's crazy too)... but the guy in the video is advising that you rehearse your order before getting in line. I don't really care about the lingo and I'm not concerned what the guy in the window thinks either. If I say "cheesesteak no onions and American cheese" ... he'll know what i want. If he makes a face because I didn't say "one without and american" who really cares. If I was gonna give advice to people visiting Philly .. it wouldn't be about - how - to order ... it would be - where - to order. Skip Ginos and Pats and Tony Luke's and go to Joe's in Fishtown. Better food and nicer people.

As a Brit that lived in South Philly (10 hundred block of 10th St) from 1993 to 2000 I literally had Pat's Steaks and Geno's within View of my Front door Across the Baseball field. I was always a "Provolone With" type of Guy. I worked on South St at Tower Records and would also occasionally go to Iskabibbles (not sure on spelling) also. This video made me reminisce.

In Quakertown just north of Philly we melt the cheese throughout the meat right before rolling, a couple stirs, on top/bottom, so it's everywhere with onions & mushrooms if so desired. Then add a little marinara sauce, a couple of dill slices. My fav is American cheese. We had a sub/wing shop here in Orlando (long gone) and the owner from Pittsburg had 10 different cheese steaks from different areas of the US, most from areas in Pa and all were really good and some of the best wings around. No ketchup here for me but their Cali had lettuce, tomato and onions all cold w/ mayo.

I've lived in Philly all my life, to be more specific north Philly and I have never heard someone call a cheesesteak "cheeser" that must be some fishtown shit. Jim steak is dope but lines be crazy long, Paganos makes a pretty good cheesesteak their big as hell too.

Here is what l cook in Seward Alaska for a cheese steak sandwich, rib eye steak marinated for 3 hrs, onion, red bell pepper, pblno pepper, American or any other cheese, toasted hoagie roll. Slice a half frozen rib eye to 1/8 inch thick slices, trim the excess fat. Place in a bowl of marinate , place bowl in a refrigerator for 3 hours. You can cook the meat with the mix. Dice 1 onion, red bell pepper, porbemo pepper. Cook in a separate pan, onion first, then add your peppers. Then sliced mushrooms in another pan and sautee.

Wow. Went to Jim’s all the time 1978 to 1982 when I lived there. Lived in center city, had no car, only place I could walk to, and it was great! Now when I visit Philly, it’s John’s Roast Pork....and still back to Jim’s for old times sake.
