Here an idea for the ultimate fried chicken episode do butter milk brining, smoke the chicken, 50/50 all purpose flour & corn starch, cooked in wagyu fat inside a pressure cooker

I just started using beef tallow! Instead of using nut or veg oils or butter. Sometimes I use duck fat too. But it's such a difference! It's like the fat Cooks the Food, instead of the food cooking In It. Does that make sense? Also we use So Much Less so the increase in price isn't a big deal. I bought a 16oz jar 4 weeks ago, I use the fats at least once a day to cook and I still have around half a jar! The best part, no headaches from overly oily food! 😀
