This cheesy toast from 1814 will pair lovingly with a bowl of hot venison stew. "Roasted cheese" was such a popular dish in early America that you can find it in multiple cookbooks spanning over 40 years. I can see why. It's delicious! Thank you to our friends Anna & Ethan for kindly donating a piece of their hunt.

Make this at home and let me know how it turned out😊. An image of the original cheesy toast recipe published in 1814 (or receipt as they used to be called) can be found at the end of the video. This recipe was published in A New System of Domestic Cookery (New York). The recipes for the venison stew + cheesy toast can be found below. I made the venison stew using ingredients that were plausible in American cookery for the early 1800s. Add any modern spices and ingredients as you see fit (tomato paste would be a nice addition, just not period correct). Venison Stew, Justine's own Venison, 1 pound (I used a backstrap) Carrots, chopped, 2 cups worth Celery, chopped, 1 cup worth 1 large onion, chopped 2 cloves of garlic Mushroom catsup, a generous dash Beef stock, 4 cups Rosemarry & thyme, a tablespoon of each fresh Salt & pepper to taste Butter, 2 tablespoons Melt your better in a hot, deep skillet. Add your venison, cut small, and stir frequently till seared. Remove from the skillet then add all of your vegetables. Cook for 5-10 minutes until soft. Once soft return your venison to the skillet as well as the herbs, salt & pepper, mushroom catsup and beef stock. Mix well. Cover then reduce your heat to simmer. Simmer for 1.5 hours. Be sure that you cook this low and slow. Take your stovetop down to its lowest setting for this. This tastes very good with bread on the side! 😁 "Roasted Cheese", 1814 Cheddar, Colby, Cheshire or Swiss Cheese, 0.5 cups more or less. Grated 2 boiled egg yolks 0.5 cups bread crumbs 6 ounces of softened butter 1 tablespoon of mustard Salt & pepper to taste 4 large slices of bread In a bowl combine your grated cheese, boiled yolks, bread crumbs, butter, mustard, salt & pepper. Mash them up into a smooth paste. Toast your sliced bread. Once toasted smear the prepared paste thickly over them. Cover with another plate or tin foil and bake at 400 degrees for 10 minutes. Remove the top lid and bake for another 5-10 minutes or until the cheese on top is melted and toasted.

In the original receipts it doesn’t say to boil the eggs. How did you know to do that?

@@amyramsay6633 It's weird but it's implied. Historical recipes are terribly vague. This is a popular one and has been shared and recreated many times, with the yolks being boiled in every adaption that I've seen. When it's boiled it becomes a paste. If it's raw it'll just become a goo that's hard to spread.

@@amyramsay6633 I would have also assumed to boil the eggs and use the cooked yolks because otherwise it would be raw and you really shouldn't eat 'pure' raw egg. The egg mixture reminds me of 'egg salad' on open faced bread, the only exception would be the 'toasting' applied to this recipe. It looks great, def want to try this both as is and with garlic... hoping it's as fantastic as it looks in the video.

We grew up eating venison, pheasant, bear … what could be shot or trapped, we ate it! That piece of venison that Justine cooked looked absolutely wonderful. I’d love to taste the stew!

Wonderful....When I lived in the wilderness for 20 years, I mostly are venison. Still to this day, I love venison.

I can just imagine the smells!!! And the stew and the toast looks delicious. If I make the toast I’d have to leave out the mustard but for the rest I wouldn’t change a thing….now I want a bowl of that stew! Plus, I’ve had mushroom ketchup…it’s good!! Your reactions were cute too 😊

Now this is exactly what I'll be making with those one too many bags of deer meat this hunting season. 🤗 And the toast sounds especially good, sounds similar in taste to a recipe I have for an Irish Rarebit or "Rabbit" which I find quite tasty, but along with mustard and cheese they add chopped pickles! 🥒🥒 Also, you look especially dollish tonight and it is quite sweet. 💖

You might like this one channel (can't remember if I recommended it or not already), but this channel Indoora World, is like ASMR cottage core type of slow living set up and something I've noticed is she does like little stories here and there but also cooks and uses recipes and things and the feel of it reminds me of your channel even though both are different and serve different purpose. You might like it.

There are plenty of deer in Aus. We live close to the bushlands and there are hundreds of deer wandering around after the ol deer farm closed down. They let them run free. Gotta watch cause they run out on the road.

Back in the day we used to have venison every year. We had it made into sausage, burger ,Roast, cutlets anything you could eat. So yummy and fat free
