Possibly one of the cutest scenes in all of TNG: Scotty objects to the taste of synthehol, the alcohol substitute. Nothing like the real thing! :oD Thankfully, Data helps out. From Star Trek: The Next Generation, 6x04 Relics.

I love how Brent Spiner interrupts himself when playing as Data. He doesn't trail off - at all - like a human would. The way he stops is full, and sudden. Like a computer. The way he even repeats himself with the exact same intonation feels like a computer trying to resolve an error. You also see it with the scene with the finger trap. He pauses between each word like a computer lagging, trying to process two different intense processes at the same time, interfering with each other. Brent Spiner really sold it to the audience that he was an android, a robotic life form, with a computer for a brain.

Data always had emotions. Always. There is no sapience without emotion. And Data is clearly sapient. There is no desire, no personal choice, no interest, without emotion. Data wants to be more human. I'm pretty sure most people who drink alcohol and or coffee do so because they enjoy the taste, the after effects are just a pro / con if enjoying the taste wasn't the main pleasure in the act they could simple drink a small amount of 60%+ alcohol or swallow a pure tasteless caffeine pill and go straight to the after effects xD

The phrase "It is Green" is a Easter Egg reference to a older STAR TREK episode from the 1960's. In that Episode a Curious Alien Species had taken human form and was holding the Enterprise Crew at bay to observe and study them. The Aliens were wearing these Hi-Tech Belt Buckles which seemed to be the source of their power while onboard the Enterprise. It is during this time that Spock🖖 had observed that the Alien/Aliens were showing signs of Human emotions while eating some fruit, one Alien seemed to be enjoying the fruit so much that it seem to distract the Alien from his normal duties of observation. After seeing this Spock came to the Logical Conclusion that the Alien/Aliens had never felt emotions of any sort before and the now hijacked human form that they had taken was having an unexpected side effect making them feel...well human. This gave Kirk the idea on how they can gain the upper hand on their captives by distracting them and taking their belt buckles of power devices, but what distraction would work the best? Enter Montgomery Scott also known as "Scotty",who is not only is the greatest engineer on this side of the known Galaxy but also the Greatest Drinker the Universe has ever seen. Scotty informs Captain Kirk that he knows he can get the Alien Drunk and allowing for him to retreave his Magic Belt Buckle of Wonder, Kirk approves of the plan and so does Scotty. Back in Scotty' s quarters Scotty starts breaking out his collection of rare Human and Alien Alcohol and talks the Alien into joining him. The Alien already addicted to human emotion thanks in part to the fruit he had eaten earlier starts drinking. Over a course of a few hours they tear through Scotty's liquor collection at Warp 9 and Scottys running low on Liquor but continues to give the Alien everything hes got decides to opens his last two bottles. The last one was a rare bottle of original Scotch he was saving for only the most special of times but before he went to his ace in the hole he decides to bring out the other bottle first, a bottle that was a mysterious Alchole, Scotty knew it was Liquor but what kind and type was unknown. The Alien who was close to docking his ship in the town of "Pass Out" loved the names of each bottle and without missing a beat turns and asks Scotty "Whats that?" Scotty looks at the bottle and sees no lable, Scotty opens the bottle and smells no smell, Scotty pours a glass from the bottle and replies "It's Green" and they drink it. Type in KZfaq search "Scotty drinks a alien under the table" and the episodes scene should show up I left out the ending so you can find out what happens, a really great easter egg.

I believe they explained that in one episode as a controlled measure to prevent people from doing so. Hence why they have a barkeep that can manage supplies. I think it's for the best when you have a ship fully staffed, only to give them access to an unlimited supply of pure alcohol from the ship's replicators. I imagine it would lead to performance issues.

Some fun facts about James Doohan. He was born and raised in Canada. He doesn't have a Scottish accent in real life. He was a WW2 vet, and stormed the beaches of Normandy. He was shot 6 times by friendly fire, lost one of his fingers, and survived a chest shot because of a metal cigarette case his brother gave him. He went to serve on still until the end of the war.
