This recipe is from Delia Smith's excellent and invaluable Christmas Book. Stollen is a fabulous creation from Europe, it's a bread full of fruit and Christmas flavors. Once you have tried this there will be no going back to a shop bought version.
RECIPE:
5 floz (150ml) warm milk
2 oz (50g) sugar
2 Level tsp dried yeast
12 oz (350g) bread flour
1/4 tsp salt
4 oz (110g) soft butter
1 egg beaten
1 1/2 oz (40g) currants
2 oz (50g) sultanas
1 oz (25g) candied peel
(finely chopped)
1 1/2 oz (40g) apricots
(no-soak chopped)
1 oz (25g) glace cherries
1 oz (25g) almonds chop'd
Zest of 1/2 lemon
6 oz (175g) marzipan
