DELICIOUS CUSTARD BREAD CAKE
Preparation Time: 15-20min.
Cooking Time: 42-44min.
Serving: 4-6 people
Ingredients:
1. Bread slices 7-8 pcs.
2. Egg 3 pcs.
3. Butter ¼ cup + 1 Tbsp/3.5 Tbsp oil.
4. Sugar ½ cup.
5. Baking powder 1 tsp.
6. Baking soda ¼ tsp.
7. Cornstarch 1 Tbsp.
8. Vanilla extract 1 tsp.
9. Salt a pinch.
10. Milk 1/3 cup.
11. Cocoa powder 2 Tbsp.
12. For the Custard:
13. Milk 2 cups (500ml approx.).
14. Vanilla sugar 1 Tbsp/1 tsp vanilla extract.
15. Sugar 3 Tbsp.
16. Vanilla custard powder + milk 3 Tbsp +1/2 cup.
17. Sugar 3 Tbsp.
18. Cornstarch + water 2 Tbsp + ¼ cup.
19. For layering:
20. Almonds ¼ cup.
21. Cashew nuts ¼ cup.
22. Some pistachio.
23. Procedure:
Making the Cake:
In a blender crush the bread pieces like crumbs.
Add baking powder, baking soda, and cocoa powder. Mix well.
Beat the eggs with sugar, vanilla extract, and salt until fluffy.
Add the bread mixture and butter. Fold and mix well.
Line a saucepan with parchment paper. Spray oil before setting the paper.
Pour the batter into the pan. Spread evenly.
Heat an old pan/skillet on medium-high heat. Place the pan on it. Lid on. Seal the lid properly so that steam won’t come out.
The first 5 min heat will be on medium-high. Then reduce the heat to low for 42-44 min.
If a skewer comes out clean, turn off the heat. Place the cake on a wire rack to cool.
For the custard, mix the custard powder with milk and set aside.
Add sugar and vanilla sugar/vanilla extract with 2 cups of milk. Mix well
24. and pour into a pan.
25. Turn on the gas on medium heat. Stir frequently the milk until comes to a boil.
26. When it starts boiling, stir the milk constantly and gradually add the custard mixture.
27. Then gradually add the cornstarch mixture. Stir continuously until thickened.
28. Turn off the heat and let it cool.
29. Dry roast the nuts for 2-3 min and crush them into small pieces.
30. Take a 7 X 5 X 1’5 inch casserole dish.
31. Cut the cake according to the size of the tray.
32. At the bottom, place the cake pieces densely so that the base becomes stable.
33. Drizzle 2 Tbsp of milk on it. Put the 1st layer of the custard. Spread evenly.
34. Sprinkle some crushed nuts.
35. Then set the 2nd layer of the cake pieces. Drizzle milk.
36. Spread the custard. Sprinkle the nuts. Press them with a spatula to set them evenly.
37. Refrigerate for at least 4 hours. Overnight is the best.
