This is my 4th video on making bread with the Anova Smart Oven.
Welcome to our kitchen, where we're about to embark on a delightful journey into the world of bread baking! In this video, we'll guide you through the step-by-step process of creating mouthwatering homemade bread using the Anova Smart Oven and the Challenger Breadpan.
Before we dive into the bread-making process, here are some important steps to remember:
Step 1: Prepare the Oven
Remember to take out all the original Anova trays because they won't be strong enough to hold up the Challenger breadpan. Instead, use the rack for a sturdy foundation.
Now, let's get to the heart of bread making:
Step 2: Mixing and Kneading
Using an electric mixer like the Kenwood Pattissier, we'll start by mixing our ingredients. We're using two types of flour, dried yeast, sugar, salt, and water. The dough hook is essential for achieving the right consistency.
Step 3: Leavening
Leavening is a crucial step, and it happens in four intervals of 20 minutes each. After every 20 minutes, fold the dough to incorporate more oxygen in the bread. This is vital for the yeast to do its work and create those lovely air pockets in your bread.
Step 4: Shaping the Loaves
After the final leavening step, we'll shape the dough into beautiful loaves using the Challenger Breadpan.
Step 5: Baking in the Anova Smart Oven
The Anova Smart Oven is our secret weapon in this bread-making adventure. Its precise temperature control and steam injection will help you achieve that perfect crust and crumb. Always use the rack when placing the Challenger Breadpan in the oven

Cooling for the Perfect Crust
After your bread is fully baked, it's crucial to let it cool down within the oven. Leave the oven door slightly ajar, with about a 4 cm crack. This step ensures a nice, crisp crust. Leaving the loaf to cool outside of the oven can soften the crust due to residual steam coming from within the bread.

In the first fase in the Challenger Pan the steam is on 0%. In the second fase when you bake the bread for consumption the steam isat 100%. That gives me the best results. The Challenger's construction produces steam within the pan itself so you don't need steam from the oven.

In the app, you’ve set Steam to zero however during the cook Steam is set to 100% 🤔

I think he used 0% steam only during the preheating of the pan.
