I just made brine last night. There should be just a little bit of sugar to balance the brine maybe a teaspoon. I think if you allow the dry spices to bloom in the hot pot before adding the vinegar you’ll be pleasantly surprised. I used black pepper corns and red pepper flakes. I’m going to have to get some mustard seeds. My hubby has been drinking a shot or 2 of brine every day for a jumpy stomach. Now he can eat whatever he wants.

The real hack is to use a low-pressure chamber to insta-pickle cucumbers. Suck all the air out of a pickling setup, then release the pressure and the brine solution will instantly penetrate every inch of the cucumber.

@@louisgrant3170those super cheap as seen on tv type vacuum sealers meant for Ziploc bags can do the trick too! Just gotta make sure you get one meant for wet ingredients. They also make fancier ones (read: usually $100-200) that actually snap onto their own lids that fit a standard mason jar.

@@louisgrant3170 there is something called a quick pickler I think, you can use that. It's plastic with a top and a hand pump that you use to suck all the air out. Works really well.
