Hi friends, how are you? Today I propose a typical Sicilian recipe of Ragusan scacce. They are stuffed focaccias that are prepared with a dough made with semolina flour, rolled out very thin. The typical traditional filling is made with tomato sauce and caciocavallo.

🥣 Ingredients
Remilled semolina flour 500 g
Warm water 220 ml
Brewer's yeast 8 g (to be dissolved in 30 ml of water)
Salt 8 g (to be dissolved in a tablespoon of water)
Olive oil 50 ml
For the dressing:
Tomato 800 g
Olive oil
Garlic and basil
Caciocavallo cheese 240 g
