Dear June, I have depression and anxiety that I manage pretty well but I haven’t had the drive to cook or bake in years. I will occasionally cook but it’s a chore. I like cooking shows but I never get the urge to cook after watching them. Today, I found this channel and this was the first video I watched. Campfire cooking definitely takes practice. I love it. Pro tips: I would have built my fire closer to an edge of the ring, so it would be closer to me, also account for wind direction. Build your fire upwind in the ring. Also, I like to take a tall rock and put it 10" from the ring edge, so you can balance the grate on the edges and rock in the center. Make sure your pan isn't too close to the coals. Give the fire a good blow, or fan, to remove ash. You may even want to dampen the edge ash with water so it doesn't blow around. Use the hand test to determine coal temp.

The combination of June’s love for instant potatoes plus the camping reminded me that one of my family’s fave backpacking meals is mashed potato quesadillas, which are pretty much exactly how they sound. They are soooo good after lots of exercise and being outdoors. These ingredients could also be used to make scrambled eggs with plantain!

add 1-2 table spoon of corn/all purpose flour in the mix to make it, so it's more filling :)

Nope. Never add dairy or water to eggs. Unless you are making a quiche or something that requires dairy, leave that out of the equation. Why? Adding milk dilutes the flavor of the eggs and thins them out. This makes it very easy to overcook them. It also reduces that vibrant color, as well. If you want to "stretch" the eggs, do it by adding to it things that add flavor, not dilute it. And it is a myth that it makes them fluffy. Club soda or water achieves the same thing, but better. 1 tablespoon per egg, if you are really set on adding liquid to your eggs. Ask a chef what they add to their scrambled eggs. It is unlikely to be milk.

I'd never had Spam in my life before tonight. I saw this episode when it came out and wanted to try the tacos but forgot about it. And when I would think about it again, I'd never remember to get the Spam next time I was at the grocery store. When I say that was one of the most amazing food experiences I've ever had, I'm not exaggerating. I added cheese and sour cream, subbed the beans for hot dog chili, and subbed the Asian pan sauce for hoisin. Learned from June and didn't add any salt to anything. Literally so perfect. Complex but with each element standing out so fabulously. June, you truly are a genius. And I'm so thankful that you've broadened my food horizons. Your videos comfort me when I feel alone. Also check out your local mom & pop stores, farmers and international markets. Sometimes they have better deals than your big name grocery store too. It's also good to look in different sections of the store for items. Milk in the dairy section maybe 5 bucks but if you go in the cereal aisle you could get parmalat milk or almond milk for 2-3 bucks. I do that with my seasonings, I get them from the "ethnic aisle" and they are cheaper and bigger sometimes than the regular baking aisle.

This is my favourite budget eats, yet! I love the creativity associated with this outdoors version. A different spin altogether when there is no functioning kitchen. I hope there are more camping ones in the future. June is a star!

Damn. This is really awesome camp cooking with the usual spice mixes you grab. My "TACKLE BOX": I like to bring Apple Pie Spice Montreal Steak.Seasoning, Seasoning Salt, Greek Seasoning, Italian Seasoning & lemon herb. To keep my camping groceries cost down, I buy a giant bag of unbleached flour, potatoes, bag of rice, sunflower seeds & nuts, a few bags of bulk carrots/celery/onions/garlic/lemons, Maple syrup, honey, plus shelf stable sauces like chili paste, dijon mustard, sweet spicy relish, vinegar, dehydrated fried onions/garlic/scallions Canned veg & Dried veggies if I can find them at the bulk section. They make a pot of chicken stew on the 1st evening with the frozen marinated meats I wrap. No need to chop stuff. If I can sneak frozen veggies to keep the good cold, I grab broccolli, stir-fry veg, corn & peas. The meat I prep stays cold for 2 days in a cooler with ice. Then when the meat is used, We eat bacon, canned ham, spam, weiners, sausage for the rest of the trip. I always make one pot meals & meats with grilled veggies, or skillet breakfast like hashbrown pie. We shop at gas stations, dollar stores & farmers markets on the way down to the river to save more $. Sapporo Ichiban ramen chow mein packages are also eaten with fried eggs on top LOL. Our main bread products are homemade from the flour: bannock cooked on a stick, frybread, flour torillas, pancakes & then maybe frozen pizza dough for calzones. ALL fits in 2 giant backpacks & a cooler when you portion out all your ingredients in advance & no waste or extra weight.
