In case you haven't met June, she's kinda obsessed with MSG. You've asked June to walk you through her favorite spices and she's starting with one of the most controversial: Monosodium glutamate. But why is it controversial? Why are so many people scared of it? Let's talk about it.

Plant based foods contain more GMP (as well as MSG) whilst animal protein sources contain more IMP in fusion with MSG - hence why veg (and fruits) can have an umami quality to them. The longer they are left to ripen, the more GMP and MSG they contain. I did a whole PhD on MSG, lovely to see these myths debunked and a chef who uses MSG with pride!

Exactly. The “anti msg” movement began with the “Chinese restaurant syndrome” claims like June stated in the video. Okay, one problem with MSG is the way of how it is produced. In Germany many companies abolished the classic MSG in their products due to marketing reasons, replacing it with a MSG pre-product that contains natural MSG. They call it “yeast-extract”. The problematic thing with the yeast is it’s ability to ferment sugars into alcohol. While the “yeast-extract” is produced, it naturally ferments sugars that are used in the production. This fermentation process is of course not completed, otherwise the companies would be left with alcohol. So, as a byproduct, the yeast-extract contains “sugar-alcohols” that have not gone through the complete process of fermentation. Many people have a severe reaction to sugar-alcohols, which cause massive diarrhea, extreme bloating and stomach cramps. This is classified as a FODMAP-intolerance (fermentable oligo-, di-, monosaccharides and polyols) or “Non-celiac-non-wheat-sensibility”. It can easily be tested out by eating a spoon of the sugar replacement Erythritol. So the problem is not the MSG itself. It’s the byproducts that are left in the production processes. MSG that comes in a pure form as a seasoning might not have that problem, but a convenience food might be contaminated with sugar-alcohols.

My mom is sensitive to MSG, but she's never stopped my siblings or me from eating stuff with it added in (Doritos and ramen for example). She's sensitive to lots of other foods, such as cucumbers, coconut, and rosemary, so that probably helped her know that it wasn't a problem for others - that, and she knew we'd eat it anyway! 😅

My MSG of choice is the Knorr chicken and shrimp bouillon powders. I add them to everything. The first ingredient is salt, second is MSG. Everybody's grandma uses Knorr, the stuff in the green and yellow jar or box, but it never gave them "Chinese restaurant syndrome". As a kid I always saw "No MSG" on things and never knew what it was or cared, but when I grew up and found out the who behind demonizing MSG, I actively sought to consume it.

Thank you June! I was completely ready to hate this video even though I love everything of yours. You pointed out we need salt, yes. You pointed out that SOME people could have reactions while most don't, yes! Most of this people are neuroaytypical. Raising and waving hand vigoursly here. MSG can act as a stimulant being a catalyst for many reactions. Waving hand again. Thank you again for not disrespecting and dismissing those of us who really do have to deal with multiple filler reactions. 😊❤

My mom had an msg sensitivity for years but she's also allergic to mushrooms and egg yolks, both of which have natural msg. But msg stigma IS real and it NEEDS to be addressed. Thank you, June!

Normally food producers use MSG because it’s easier and cheaper to add flavor to things. I agree with Aron in that point. It depends a lot on the budget and the objective of the product, like if it’s a more “healthy snack” or a more “organic” snack. If it’s just a regular snack they will add msg instead of mixing and combining complex flavors and spices. It is up to you if you want to consume msg or not but as everything in our lives we need to respect other people’s opinions!! Loved the vid June!!

i add msg to all of my dishes lmaooo, and even additional additives amd guess what? im well and alive. i think msg is really cool that it is recognise as the 5th taste bcs it just tied everything together and completed the dish where the taste lacks

In Malaysia, we call MSG as Ajinomoto. Regardless of what brand, we still call them Ajinomoto lol. And you know, Ajinomoto brings another level of taste to dishes especially in Asian recipes. Long live Ajinomoto! HIDUP AJINOMOTO!

The gizzards cooked second, with MSG, tasted more salty because June cooked that batch in the same pan that she cooked the non-MSG gizzards in. She included salt in the pan the first time and then used the same pan to make the MSG-salt gizzards. So I think that’s why Aaron was tasting and perceiving the MSG batch of gizzards are more salty; they actually were! This was a cute and fun video. Love this June! Thanks for reaching us all something new in an engaging way.

If I remember it right the story around MSG goes so much deeper. The doc that said that MSG is bad does not even have the Chinese/Japanese name that he stated. It was a move against the rise of Chinese restaurants in the US. A lot of people actually had the syndrome with the headache which was mostly rooted in them eating too much at the restaurants and by that eating too much salt which lead to them feeling dryed out (more salt, more drinking needed) and that lead to dehydration headaches and salty headaches. So they just pushed it on the MSG. Even if it has nothing to do with it. 🥲 Ridiculous.. super weird.
What is MSG, and is it actually bad for you? - Sarah E. Tracy
