Here's the recipe for this Detroit Style Pizza:
Ingredients:
300 grams (about 2 1/4 cups) bread flour
220 grams (about 1 cup minus 1 tablespoon) room temp water
9 grams (about 1 tablespoon) Diamond Crystal Kosher Salt
5 grams (about 1 1/2 teaspoons) active dry yeast
2-3 tablespoons extra virgin olive oil for the pan
Sliced pepperoni (as much or as little as you like)
340 grams (12 ounces) shredded Wisconsin Brick Cheese (or Jack/Havarti Blend)
Pizza Sauce as shown
Add your flour, water, salt, and yeast to the bowl of a stand mixer and knead with the dough hook for about 5 to 6 minutes. Transfer the dough to a greased bowl and cover with plastic. Let rise at room temperautre for 2 hours.
Fire up your oven and prepare for cooking at 500-550°F.
Oil the bottom of a 10x14 pan with the olive oil. Spread the dough in the pan. If it won't stretch all the way to the edges of the pan and stay there, let it rest for 15-20 minutes and stretch it again to get it to the edges.
Top your pizza.
Toss it in the oven and let it cook for 12-15 minutes until you think it looks awesome!
