Dhalpuri with Lentils (Lentil Puri, Lentil Roti, Lentil Flatbread)

I developed this delicious 'dhalpuri with lentils or lentil puri' recipe recently after running out of dhal! I was forced to use lentils but the end result was fantastic. I might like this better than dhalpuri!
The process required patience and skill but turned out well despite the challenges.

To boil lentils
1 lb lentils
10 cups water
1 tbs salt
To cook lentils:
6-8 cloves garlic
Hot Pepper
6-8 culantro leaves (or handful of cilantro)
1 tbs ground roasted cumin
3 tablespoons oil
To knead flour
4 cups all purpose flour
2 teaspoons baking powder
2 tsp brown sugar, optional
1 tsp salt
1 ¾ cups lukewarm water, or as required
Pinch Yeast, optional
Plus 1/2 cup vegetable oil, for cooking roti

Hi Ria, maybe you can try frying the lentils in a dry pot over low heat to draw out any moisture from the lentil THEN process it. Works all the time with dhal for me. Nice recipe btw😊

Use a fork when mixing to prevent any more sticking together. Persistence is key. Great result.

Hi Ria, nice video! While I have not made this particular recipe, I can just share from a general experience with dals that if you are looking for a crumbly texture, then soak the dal first, then pulse in food processor until desired crumbly texture and then steam it in a steamer until cooked. This has worked in other recipes for me.

Hi,my name is Kali and first thing first; I watch lots of Trinity cooking being a man growing up being the only son in the family with one elder sister who go married early and moved to New York..Growing up my mom was a great cook, when the family had their religious services my mom was the head cook. After l got married in 1968 the following year my wife & I moved to N.Y. where I learned to cook n help around the house. I am sure that almost everyone owns a Kitchen Aid. Ria you are an inspir me very much because I love to cook. I will try this lentils puri. I have already cooked pigeon peas puri, chatine seeds puri. Seeds from the ripe chatine. Boil and mashed season the same way. Black eye peas puri and black beans puri. All turned out very good. 😊

Hi Ria, All the nutrients are in the water . Why put so much water to boil the lentils ( what is the name of the lentil). Put enough water to boil it , so the nutrients will be in the Lentil and not left in the water. Thank you

Hi Ria here's a method to try put a damp towel under the bowl next time and that just stop it from sliding. I saw someone do that, maybe you could have toasted the before you put it in a food processor you should try that one day not for roti but just see how to lentils turn out

I think if you put the ground lentils in a wide cast iron frying pan, dry, on a low to medium heat, for long enough it would drive out the moisture.

That looks so delicious! I always rinse my hands during bread making and other tasks that require touching food. It just feels better and I can get a better sense of the condition of the dough when I don't have shaggy dough bits or flour stuck to my fingers.😉

Hi RIA! It was so lovely reading about dhal puri. I am from Bengal and settled in Delhi. I love dalpuri as it's a regular Bengali item. We always have it with alurdam which is a flavoured potato curry. Sometimes, the dough balls are smaller and then they are rolled out into puris and deep fried in oil. Immensely tasty too. But nowadays people prefer the roti version more as it uses less oil. Thank you for your lovely recipe and for reminding me of home.❤

That is a common from my house and also chickpeas I use yellow Lentils all the time I have stopped using split peas. This is the first time I've seen a person using yeast in the dough.

Just a tip, instead of boiling the lentils, soak in some hot water, then put it it the food processor. You would get a more grainy texture similar to dahl.🤷🏻‍♀️

That's easy. Boil, peel, and mash the potatoes, add your desired seasoning such as green chilies, red chili powder, coriander powder, cilantro, dried pomegranate seeds, salt and a pinch of black paper, and loads of fresh cilantro. Once everything has been well combined, shape them in golf size balls or in half-inch thick and in one-inch radius and keep them aside. Now, for the batter, traditionally the batter is made out of chickpea flour but you can use all-purpose flour in a flowing consistency, just like a crepe batter, thinner than pancake batter, seasoning can be added to the better as well such as salt and bit of oil for extra crispiness. Heat the oil in a frying pan to 350 F, dip the balls in the batter and drop them in oil one by one and fry them till they are golden brown. They can be eating any with ketchup or any available or desired dressing. Good luck!
