【Yatai Keiji】ーYATAI KEIJIー
〜Bringing Hakata Yatai Culture to the World〜
《《Shop Philosophy》》
“For the culture we want to inherit and the smile we want to protect.”
Since its founding in September 1991, Yatai Keiji has changed its shape many times to preserve Hakata's yatai culture. I was at the mercy of the regulations and rules specific to food stalls, and there were times when I couldn't even do business due to the rain and wind. Nevertheless, in order to pass down Hakata's yatai culture to the next generation and protect the smiles of our customers, we will continue to convey the lovable yatai culture to the world.
We hope that people around the world will enjoy the food of Hakata, understand the food stall culture, and love it. And the children who will be responsible for the future world will be excited with smiles
We will convey such food culture to the world. 1 General Yuta Abe

Imagine he goes back and forth to put his stall shop together, same thing at night when everything is over. I doubt the work ends there, because I'd imagine he'll have a ton of prep work to do for the next day, especially for that Ramen. Absolutely incredible levels of work ethic! 😮😮

They're not usually out there every day, instead its every other day or 3rd day depending on stall space availability, food prep which are different menus each visit, shopping for more aclohol/food, budgeting, weather, and season. Other than that, they're truly hard-working chefs at best 💪🏽💪🏽💪🏽💪🏽... and he's also VERY cute 😍😍❤❤😍😍

I love this . This young man's diligence and humbleness is honourable . A great example of good , honest work . His reward is not just in the material . He is rewarded in his soul , you can see it . I know I was just watching him . This is when the internet actually works for good . To share a day in the life of someone on the other side of the world . Thanks to this young man , and those responsible for this video . 👍👍

It's a massive, exhausting commitment, no matter how you feel. I was wondering how he handles this alone. I used to own a coffeehouse, and I absolutely needed at least one more staff member to cover me while I went to the bank or store or to a government office. What does he do when he has no time to even check for messages that require his response?

I have the utmost respect for this chef, for his ability to prepare food but, much more respect for his willpower in making the journey with the trolley many times. If I think that this work has to be done twice a day, every day, then this young man and all those who carry out this activity deserve the first place among workers.

@@sandracardenas525 Certainly. I should have specified that I was referring to the category of restaurant workers. Every job requires commitment and effort, but it must be recognized that miners, farmers, workers, cleaners, bricklayers, blacksmiths, craftsmen and many other categories, require a physical commitment that certainly those who work in the office do not have to give. The writer has served for 43 years in a judicial office, where a commitment without time limits was required: she went home when everything was settled, not before. but I do not allow myself to compare myself to the aforementioned categories.

This is impressive on so many levels that I don't even know where to start. - The work ethic and labour involved with the detailed, grueling prepwork. - The culinary skills. - The way japanese society allows this to work (He can leave his stuff and have trust thar noone will steal it). - The energy, the vibe. And some of the questions that comes to mind! - How does he wash his hands, plates and so on? - How does he use the restroom when needed?

@@harrypotterdegriffonHe has a freezer that he VERY CLEARLY PLUGS INTO THE ELECTRIC OUTLET CLOSE TO THE START OF THE VIDEO. That black metal and glass case on his food prep countertop IS A REFRIGERATED DELI CASE. He has plenty of cold storage that are electrified, and insulated chests to keep his foods cold, and probably a lot of ice or cold packs in his coolers. He can disinfect his hands with alcohol throughout the night too, which he probably does. Mind you, these carts are only open for about 5-6 (6pm-11 or Midnight) hours serving customers, and not all day, and then part of the night. Also remember, we’re seeing an extremely edited and condensed Cliff’s Notes version of his night, and I’ll bet you he does wash his hands throughout his business hours. Consider that.

Not only is he a hard worker and apparently an excellent cook, but he also serves everything on real plates and bowls and what appears to be rock slabs. There are no paper plates or cups and no styrofoam bowls.
