chef is amazing. He's doing everything from prep, cooking to even washing the dishes. I hope I can travel to Japan and visit his restaurant. tbh, I'm a little concerned though that he's doing a lot and maybe he just love what he's doing, but I just hope somebody else would do the dishes instead. Just so his hands won't weaken from the heat of the wok, and then from the coldness of the water.

40年以上の経歴を持ってああしないとおかしいと思うかもしれませんが、いくら長く料理をしても清潔と一緒に精巧にする方は珍しいと思いますいくら長い経歴を持っていても基本技をどれだけ忠実に固めることが重要なことなのか改めて分かる映像です

5日前に行きました。今まで２回行ってみてタイミング合わず。久々に辿り着けました。というのも自分の記憶違いなら申し訳ありませんが。同じ川口市内からの移転のお店だと思います。前店舗の閉店は愕然としましたが（気候が良い時の２階は最高だった）ご主人も元気そうで何よりです。当然最訪問したいと思います。

こちらのチャンネルを見てしみじみ思ったのがどの職人さんも材料一杯入った鍋をリズミカルにふっている事。しかも１回や２回じゃなく。自分でも料理するけど材料入った鍋は想像以上に重い。やっぱり毎日こなしてるだけ有ると感服しました。これからもこれまでも作った方に感謝の気持ちを持ち有り難く頂く事に精進しなくちゃね😃

back in the days when i travelled to japan every now and then because of my job i prefered to go to these small family owned restaurants rather than to go to a big restaurant. the hospitality is unrivaled. and this is definitely one i would like to visit. everything looks sooooo good.

The chopping technique he is using at 5:42 is mesmerizing. I’m not sure it’s the most “objectively” efficient method, but it is extremely satisfying and clearly he is very well practiced at it - and that’s enough justification for me.

I often think everyone who chose cooking as their profession must love doing it. Some other jobs you can do without liking it or even hate it but you can’t really make good food without the love for it. So when you love what you’re doing, hard working almost always comes along. I enjoy watching the chefs cooking food and interacting with their coworkers and customers. I admire their hard work and the atmosphere they created.

All the tiktok videos with the young 20-somethings always complaining about how much work they have to do…..they ALL need to watch this gentleman doing his job. Not a free minute. If he isn’t cooking, he’s either preparing (chopping) or washing dishes by hand. Young people need to learn a work ethic and quit whining about hard work. I praise this gentleman and his staff.

That chef is world class and better. The energy, strength and stamina to do all that he does is inspirational especially at his age when most people start slowing down and coasting. I'm 65 on pension and making a bowl of ramen and coffee with hot chocolate and maple syrup is my daily routine. I remember having strength and energy like him but I was in my 20's 30's and 40's . Well his restaurant must be very successful 😊
