I don't understand why Diac is used, is Diac used because for it's breakdown voltage properties or for it's bidirectional AC current flow properties? Why is Diac used on Triac's gate terminal? I can never understand why the Diac is needed, seems like it is used for it's 32 volt breakdown voltage only.

The TRIAC is primarily used for its switching properties (much like a MOSFET or BJT) and the DIAC is primarily used for its breakover voltage (much like a MOSFET's Gate or a BJT's Base). The DIAC's role is to "wait" for the capacitor to reach the DIAC's breakover voltage, then turns the TRIAC "on" by giving current to its terminal. Since the TRIAC acts as a switch, without the DIAC, nothing would trigger it ON with a delay. If you bypass the DIAC (or remove it) and short the TRIAC's terminal directly to the capacitor, the TRIAC will *always* be ON because the there is no DIAC breakover voltage to delay its switching, hence no dimming effect. The circuit requires *both* components to have bidirectional properties since it is powered through AC--i.e. the current periodically flows forwards and backwards through both components--although the TRIAC and DIAC would function the same way in either case.

yes, use variable resistor to replace R1, use another variable resistor R3 to parallel R2, then adjust R1 and R3 to reach your goal

Yes, certain step down converters use this method. It may damage universal motors or switching power supplies, because depending on when/how the power is switched on the sine wave, you may have short pulses of 220v which can cause damage.
