Dinakdakan, also known as Warek Warek, is an Ilocano delicacy prepared from grilled pig parts such as pork face, snout, and ears (Maskara). It is usually served as pulutan but has grown into a main dish over the years.

INGREDIENTS:
1-kilo Pork's face snout, ears (Maskara)
1/2 cup of pig's brain (1 order sa palengke)
2 medium-size onion thin slice
1/4 cup ginger
4-5 cloves of garlic (minced)
4-5 siling green (siling pangsigang haba) or
siling labuyo or both
1/4 cup calamansi juice
2 tablespoon Mayonaise (this is optional)
salt to taste
FOR BOILING OF PORK (Maskara/Tenga)
Salt
Whole black pepper
Garlic
Water
*Laurel or tanglad (optional)
