Few years ago I made my own ginger beer.. Made the mistake of using push corks.. There's still a few holes in the cealing where the corks went.

Precise temps aren't really necessary, just don't boil it the whole time, bring it to just a rolling boil and setting the burner to low to simmer (not a boil) for several minutes will do. Also this is a short, it's extremely hard to be detailed in just 1 minute.

To make ginger fermented drink I use the ferment left in the bottle to bottle more drink, adding lemon juice and a tsp sugar, in 12 hours I have a new fresh bottle

Good video but the wrong kind of bottles were used. You always need to use bottles specifically made for carbonated drinks. Not all flip top bottles are made equal. The worst kind to use are the square shaped ones in this video, because each corner is actually a weak point because the glass is so thin there.

You can always make your probiotic soda with other ingredients, ginger is just one of the easier ones to do it with.

I keep my ginger big in the fridge i neglected it for months (not recommended but still worked lol) you're supposed to feed it once a week. You can take pieces out if it gets too full

Since this is fermented and naturally carbonated a good amount of the sugar added are converted to alcohol. Just like any beed has added sugars.. the yeast in fermentation turns it into sugar and final product isn't sweet. On this beverage.. alcoholic ginger beer.. the end product will probably be a bit sweet but now as you might expect

Why? The sugar gets eaten by the yeast and turns into CO2 and other stuff, that's what makes the bubbles.
