For Ingredients and process in English Language, please scroll down. It is mentioned below in the description box.
Attention Audience! This video is strictly targeted for audience outside India and not for people staying in India. Alcohol brewing without license is not allowed in India, however, is allowed in other countries. Please check your local laws before following the recipe. This recipe helps make a strong, easy and quick Italian White Wine at home, it is healthy and quick recipe using easy to gather ingredients already in your kitchen.
Request all to respect and abide by the laid guidelines of alcohol consumption and brewing.
Thanks for watching and Enjoy!
=========================================================
Ingredients for a 5 liter batch:
1. Water - 2-2.5 ltrs
2. Sugar - 1 kg
3. Fresh Green Grapes - 1 kg
4. Active Yeast (optional) - half tea spoon
5. Empty Tumbler - Glass or Food graded plastic
6. Other Apparatus: Soup Sieve, Cheese Cloth/Hanky, Wooden Crusher, Wooden Spatula, Cling Film/Plastic sheet
Process:
- Wash the green grapes aggressively and Crush them with wooden crusher and put in the tumbler
- Mix Sugar and Water into the grapes
- Optional: Activate half tea spoon of yeast and put in the tumber
- Also put one green branch of grapes for better taste
- Air Tight the tumbler, using wooden spatula, shake the content once a day.
- Store it in a cool and dark place throughout the process. No day light or direct sun light.
- Optimum storage temperature is 26 degrees.
Week1:
- Day1 to Day 7: Everyday Mix the content using wooden spatula/stick on once a day and air tight the tumbler back.
- Day 8: Filter the content using sieve + cheese cloth, wash and sanitize the empty tumbler and put the content back.
Week2:
- Day 8 to Day 15: Leave the content in a cool and dark place for next 7 days and don't shake the containers. This is sedimentation process which will clear the wine content and settle all the particles and debris at the bottom of tumbler.
- Day 15: Siphoning process will help you further filter the liquid in the tumbler back. Leave the sediments at the bottom and put in the tumbler back after sanitizing it. Wine could be consumed at this stage as well and it absolutely good and healthy to be consumed with more than 15% alcohol content. Wine could be consumed at this time as well in case you want.
Week3 & Week4:
- Day 15 to Day 28: Bottling time! Sanitize any glass bottles and put the wine in the bottles for consumption or further ageing. Wine at this time will have 17-18% alcohol levels as compared to 13.5% in wines available in market. Refrigerate it before consumption.
Week5 onwards (optional):
- Further Ageing: For further ageing, bottles are required to be stored at a cool and dark place with lids air tight. This period is resting period and further sedimentation will happen and wine will come out to be crystal clear. Wine starts getting older with increased alcohol levels. Wine will start to get mature with awesome taste as it grows old.
OLDER THE WINE, BETTER THE EXPERIENCE AND TASTE!
Ask me anything in case of any further help is required. Enjoy!
Stay safe, stay inside and stay healthy !!!!!

Amazing!! Thanks for the detailed video and explaining the process. Though I work in an MNC, still love to cook. I enjoy making different dishes and enjoy with all. Enjoying good wine and scotch which all like and if it's self made wine?? Then it's nothing better. It would be helpful if you kindly explain hiw you are defining the alcohol content. Kindly share the instruments you used and how you sanitize and it's availability.

Hallo Sir, what kind of yeast you have used to get 15-20% alcohol content? Normally ordinary yeast produces around 8 -10% alcohol. Red Star or Lalvin EC1118 dried wine yeast produces around 18% alcohol. These yeasts are very expensive. Each 5 gram packet costs around Rs220 to Rs350. Moreover this yeast has to be imported, minimum quantity: 10 packets. Please let me know which yeast you have used. I used Redstar wine yeast to make banana wine. I got very good result. I added yeast nutrient which had to be imported. Additionally I also used Tamarind juice and citric acid as acid blend and a big cup of strong black tea. Do you suggest the same acid blend, yeast nutrient and black tea for Grape Wine? Thanks.

There is mathematical calculation to how much actual sugar you need. Using pure grape juice for wine enables it to survive several years during ageing. If you use water, then you need to drink it soon.

I have been watching your tutorial for the last few months & learnt many things. This time i have used wine yeast insted of bakery yeast. Starting gravity was 1130...after 15 days when i checked i found 0.990..that means it contained 0% alchohol? Anything wrong? Or it has turned into dry wine?I never got this type of reading. Usually i get 17% with bakery yeast. Please reply. 🙏🏻
