So well, in fact, I learned real quick that I should've made a larger batch. It takes the same amount of time to make and wait for 1 gallon of 5+ gallons of wine so, it's something you might want to consider. I also started using a juicer with an auger in it to make my wine and it's been fantastic. I introduce that juicer in the 4th installment of this wine series, how to bottle and store wine. Back in the day my mom use to make homemade wines (peach and grape). Of course, the process was completely different, she did everything by hand no fancy machines. But things are different now and she learned from her relatives.

@@PMGK I watched them all and can't thank you enough for teaching me so much. I'm 3 weeks in on my 15.6% wine hahaha. I did mess up tho and didn't put pectin enzyme in at the beginning and did it after 2nd racking. It's cloudy cloudy but since I put another campden tablet plus that PS stuff to kill yeast...its getting better. How do I sweeten it know cuz its dry and I like sweeeettttt?

That's great but now, I typically use a juicer and still combine the juice and the pulp in the primary stage.

I like how you talk in your videos. You sound very calm, the pacing is smooth, and everything is easy to understand. I remember watching a channel in T.V. called TBD. One day I saw one of your older videos. I believe you were making dumplings. I've been in love with your channel since then.

Sir, Your way of presentation is very simple, lucid and appreciable. Thank you very much for your time and efforts. My humble request is that kindly mention in SI units please. Pounds, Mounds and ounces have different values regionally but the nouns are same. mg, g, Kg, Centigrade, meter are comfortable all over the Global village please.

You're absolutely right. Unfortunately, however, Americans aren't taught in grams and kilograms etc. I honestly don't even know the conversion. I realize my channel is now global but any conversion will have to be done by yourselves through Google, perhaps. Good luck! 😊🍻

Love the videos, I'm making my second batch (an apple wine) and basically just dumped in sugar until I got the correct specific gravity. Can I ask what app or chart you used for how much sugar to add?

Charts usually come with hydrometers but you can also google one and download, save or screen shot a chart in images.

Appreciate your video series as I am looking to get into winemaking myself. Can you elaborate on where/how you get your grapes? I know that regular grapes from the grocery store are much different from grapes used in winemaking. There are so many options like wine juice kits, frozen must and fresh grapes and my lack of experience and knowledge is making this part confusing!! Any info helps!

All grapes are different but I use table grapes from my local grocery store, all the time, with no problems.

For me, the fermentation process is what's really fascinating. This concept can be applied to so many other things other that making wine. For example Kombucha, kimchi, Siracha, Apple Cider Vinegar, just to name a few. ;-)

No, nothing specific. I just use this basic formula for any fruit to make wine. Examples of my notes can be found using the link in the description of this video.

No, it isn't. Pectin powder is like gelatin, only it's a water-soluble fiber derived from non-animal byproducts. Pectic Enzyme breaks down pectin found in the cell walls of the fruit.

I have watched quite a lot of these videos and this one was exceptional for the clearest guidance yet. Thank you! Question...what is the proper course of action with your must if your sg reading indicates too much sugar? I feel it’s likely dilution but wouldn’t doing that have an impact on flavour ? Leave it alone and just chalk it up as experience. Your batch of wine will just have a higher percentage of alcohol, is all.

You know that just might be a real good idea. Since I filmed these tutorials, I picked up a juicer and it works really well so, I imagine a meat grinder would practically do the same thing. They're both fed by an auger. I wonder, though, if the juice would spray out of the front of a di?

That is technically a disinfectant but I'm not sure it's safe to consume. Straight bleach rinsed with water is okay, however, so possibly. Just don't quote me on that one.

@@PMGK Thanks. I found a good one and my wife laminated it. : I watched a gazillion videos on home wine-making and yours is my go-to. All the steps are there and easy to understand. I'm getting 40 pounds of grapes from my friend's farm this week. One question: Why don't you use bentonite?

Water, 💦 not wine is added. It helps the wine go further and technically it does water it down a bit but it's not at all noticeable, once the wine is complete. Plus the alcohol level is twice as high as commercial grade wine so, the more the merrier! 😉 🍷 🍇

What if you forgot to test the ABV before primary fermentation?

The biggest issue is, if your fermentation is slow or having problems, you won't have a baseline to compare readings. Other than that, you just won't know what percentage you've created.

i have one doubt,i need low alcohol content wine ,now my hydrometer reading is 1.090,so 2 day after my reading is 1.050 can i Change to secondary Fedamentation Or when the hydrometer reading comes to 0.999 only then change to secondary Fedamentation .

If you wanted a lower alcohol content you needed to START with a lower ABV to begin with my so, it's too late now. Besides, a higher alcohol content of 12% is necessary, for homemade wine. It prevents spoilage. Also, Don't rack it until it's finished. It takes about 6 days.

If you are going to open that lid frequently won't that be allowing oxygen into the mixture?

The Primary stage is so full of CO2 it won't effect it enough to make a difference in the short time it takes to give it a quick stir. Long term, like hours, then yeah, you're going to have a problem.

That requires Co2 and it can be done naturally or it be added later with forced carbonation. Really though, you should watch this whole series (part 1, 2, 3 and 4) to understand the whole process of wine making first, then sparkling wine will make more sense, after.

Wait, when did you add the sugar to begin with? Like I saw where you measured the gravity but you said subtract from sugar you already put in. Where did you put the sugar in?

No, the grape juice already contains "natural sugar" and the first ABV reading is based on that, what's already there. Then you make up the difference with white granulated. Does that make sense?

I made it. Food storage style buckets with a gasket style sealable ring are only like $5 bucks at Lowes and a bag of gromet's, for the air lock, are like $2. Now just drill a hole and your done.

You can still make the wine. It just helps to keep out contaminants that could create spoilage in the wine.

You don't have to but it does activate the yeast faster and ensures that you're not pitching dead yeast.

No, all parts being equal, liters or gallons, for every 1 gallon of fruit juice I added 2 gallons of water. It isn't necessary but it makes more wine. You don't have to had any water if you don't want to but you'll get 2 to 3 times the wine made, if you do it this way. 😉 🥂

Hi, I love your simple step-by-step instructions. It's so easy to follow! I would like to know where you got your conversion charts from? I purchased the same kit you have and it did not come with the conversion charts. I always have a difficult time trying to figure out how much sugar to add to my must, so I usually just wing it. It would be nice to have a chart that tells me exactly how much sugar to add to reach a specific alcohol goal. Thanks!

i make wine with none of those chemicals you were using sometimes i use metabi potassium but that's it i wont even use yeast i use the pectin on the grape i understand with some fruits and certain conditions especially if that fruit was grown with bad fertilizer all of that is a must but try make a video using nothing just a bucket an airlock and grape its fun

Hi PMGK again - I do have a second question please - you said to add the water to the must is a 2:1 ratio - can you elaborate? I can't quite see the math - you intend to make 3 gallons of wine, so you are adding 2 gallons of water to your bucket...2:1ratio with.....? with how much of your smashed fruit per gallon (4lbs you said per gallon of wine) .......help? :D thanks again !!

Hi PMGK I think I figured it out - your 2:1 ratio is with the volume of finished wine and the water you add - HOWEVER you are adding in just a bit more water than the 2:1, correct ?? 2:1 ratio for 3 gallons would technically be adding 1.5 gallons of water, but you did said you are making "at least" 3 gallons so you added in a little more water than your ratio called for - yes?

4 to 6 lbs of fruit per gallon. 2/3 juice, 1/3 water. You really don't need any water, truthfully but it helps the wine go farther and you make more wine. Plus, as you'll learn in part 2, you end up losing a little bit of wine, each time it is racked.

That's really close but realize that the measurement chart is based on the sugar found in the liquid. Adding the granulated sugar is an approximation and not an exact science. Always take another hydrometer reading and add accordingly until you've got it.

Just make sure you don’t dump that sanitizer in your sink if you have a septic tank. It will wreak havoc on the bacteria in your septic system.
