The zinc is what is providing the electricity and it is gradually consumed in the process. The potato is just providing the electrolyte and a rather poor resistive one at that! You could use anything wet with some salt dissolved in it, the metals are what matters.

Google says 110 potatoes to charge a phone. Lol I wonder if anyone's ever tried powering something using their own body's nervous system.... .. *off to do some more googling* Nice video. 😀
