You know what’s funny, I actually woke up from a nap and he said “ Oh, how’d you’d sleep”

The reason they were flat and a little more on the rubbery side is the fact that you salted the meringue pre-bake. The sodium disrupts the bond and it flattens out more than it should you can always season it after it’s baked 😅, other than that maybe some cream of tar tar and it would have been perfect

There is nothing better than fresh laid eggs. I lived in Costa Rica for a time and had to gather the eggs in the morning. The yolks are soo orange and so strong tasting. Nothing better.
