Arent there microbes that convert Nitrates to Nitrogen gas ? So they cant be measured because they are anaerobic ?

Anaerobic bacteria do this. Whether or not these can be detected via an eDNA test I do not know. That would be a good question for Aquabiomics: aquabiomics.com @AquaBiomics LLC

I believe Oceamo does similar testing in Europe.
