I have a friend who opened up a really nice hotel back in China in which they have a really nice restaurant with a full bar. The bar has huge windows where they have shelves displaying wines and whiskey bottles. I was telling him that the sunlight would just kill them all and he looked into my eyes and said, "you think I am stupid?! They are full of colored waters!" Then I kinda realized that why he is super rich while I am not😂😂

If I encountered such a scene, I'd certainly think twice about ordering there, but I suspect that whsikey lovers like those from the tribe aren't their main market, and instead they sell more to people who order whiskey to seem "fancy" or more "masculine" or whatever other dumb reason

@@nienke7713 Yeah! Most Chinese are/were still getting to know how to appreciate wine and Whisky and business people have been trying to figure out how to make money out of the situation. The first time I went to his hotel/bar was about 10 year ago when he filled the bottles with colored water, but when I went back about 4 years ago he had those bottles somehow with LED lights so the colors would change depending on the time and situation (like music, no idea how it was done). I seriously did not know what he did but smartly enough refused to drink anything from his bar. He was good enough to offer me his personal collections but they came from the trunk of his Bentley, in the 100 degree weather. So I declined.

@@nobodynoone2500 Actually those colored water bottles were just for the show. No way his bartenders would serve anything from those bottles. I remember vaguely this window was about 10 meters by 20 meters (think about it). He also knows his clients. Most international guests were in their 50s to 60s to be able to afford the hotel and they would not be the ones who would be into whisky and they would know better not to drink wine there. Whenever I go back I would buy a couple of bottles at the duty free shop at Newark International Airport and drink my own drinks instead🤣🤣

I think.. sunlight oxidizes the alcohol and causes it to form more ketones and aldehydes, which is where that nail polish remover smell would come in from. This can also happen if you heat up alcohol in a closed system, which is super explosive and dangerous.. but that would also explain the change in color because the ketone and aldehydes would break down the oils and aromatics.. Edit: having reached the explanation part of the video I'm glad I was able to remember organic chemistry!

Okay but here's my question uhhh. What are you talking about oxidizes? I didn't know sunlight could open a bottle and expose it to um. Oxygen.... the alcohol is definitely not oxidizing 👎

I drive past a liquor store in The Colony Texas every day where they have bottles sitting next to the windows in full sun. I’m always suprised they don’t get broken into, but apparently the thieves know it’s going to be bad.

We did that same experiment several years ago, and same outcome. What is amazing is that some big retail stores (WFs) have built their liquor section with shelves behind windows. They put behind those windows bourbon, Japanese whiskeys, cognac and liquors and I am amazed after 5 years they still do it. Never bought one single bottle from them for that particular reason. So yes the secondary market could be a problem, but the primary one (the non specialists) could be of concern too.

seen that too, always thought: yap that store is for basic consumers, not for enthusiasts. but i also feel bad for anyone buying such a bottle..., a tip of mine: return it, you can return corked wine, so return plasticy whisky (sadly for that you might need to have knowledge of how it should taste like)

Big retail stores would likely have high enough product turnover for it not to be a problem. First in first out, and any particular slow moving product line sitting on the shelf will find its way to the clearance section long before flavor degradation becomes a concern.

The picture on the video listing alone was enough to give me heart palpitations ... been binging on your content lately and you've rekindled my interest in Whisky (Scotch in particular). I was originally a Bourbon drinker, then started my journey with Johnny Walker Red many decades ago, moved on to Dewars, and finally a couple of single malts stole my heart ... The Glenlivet, and finally The Macallan. But then my journey ended after trying Laugavulan (sp?). I now look forward to a few more new adventures. Thank you for that! p.s. I love Brianna ... but all 3 of you guys crack me up.

As a follow-up, you could probably find an organic chemist at a university to stick that sun-baked stuff in an NMR and see if it really did change the ethanol into ketones (vs ethers/esters/etc), and maybe get an explanation of the photochemistry.

I’ve actually run whisky through an NMR for fun before! The water and ethanol peaks are so huge that they kind of drown out everything else and we couldn’t tell any difference between two different brands. Maybe if you played around with the solvent and scan time you could get better results as we were doing relatively quick scans with DMSO.

I, too, am interested in the chemistry of what's going on here. We all can see a color change, and we all experience a flavor change, and we know the sunlight is doing... something, but the question is, what? I'd love to see a follow up to this with a chemist to maybe figure out and test what's going on, scientifically speaking.

Very simple explanation from the extreme to mid. Extreme was straight UV, while residential window glass filters 99% of UV-B and 15% UV-A spectrum.

If the light source they used was an led grow light, most emit very little UV. Perhaps infrared (even far infrared) or visible spectrum light is to blame?

This reminds me of a 'shadow martini' I once read about where a bottle of vermouth was placed on a shelf next to a window where the sun was setting, A martini glass was placed behind the bottle with the sun's rays penetrating the bottle, and then passing into the glass filled with vodka. It took about fifteen minutes to complete the process, and was, apparently, a very dry martini.

Does anyone know if the effect of heat might have changed the taste of whiskey ? because I'm always concerned with the shipping time when I bought bottles online and the duration the bottle might have spent in their warehouse, etc. It can get pretty hot here, and I live in tropical country

I'm sure you guys already know this, but the same thing happens with beer. That's the origin of whe whole "lime in corona" thing. Corona in the clear class bottles becomes skunk beer and the lime is meant to combat the bad smell.

I believe that more organic and "live" stuff in the drink the more affect the sun/uv has on that drink. Since beer is a product of fermentation that keeps going on in the bottle ( just like wine and especially sparkling wine) then yeah. The sun can kill a beer really quickly. Probably the reason why many believe canned beer taste better. Coz it gets heated, but not bombarded by UV. Ps: wrote it while finishing a can of slightly fruity refreshing and heavenly smooth Ale called "Spotted cow" from Wisconsin's brewery "New Glarus". Mmmm... Delicious

My good bottles of Scotch are kept in their boxes/tubes ALWAYS. My Irish and Bourbon are daily drinkers, so normally only last a few weeks, and are kept in my dining room, next to a sliding glass door, but there is a blackout curtain on it always (Florida, so HOT).

Interesting experiment. Is it true for whisky’s that are ageing in a glass jar with oak staves? I heard the UV can help breakdown the oak to speed up the ageing process.

My wife and I bought a bottle of 120 proof knob creek in 2017 when we were on a distillery tour of Jim Beam when we were on our 25th anniversary trip, we have not open it yet what is the best way to store this bottle? Later this month we are doing a 30th anniversary trip to Makers Mark & Limestone Branch for a tour any thoughts on what bottle to get on these 2 stops?

I feel like it would be cool to see you guys test the bottles of different distillery’s. See what brands are the toughest by dropping them or knocking them over from different heights, then also maybe rating grips and looks.

At about 5:00 look closely at Daniel when he said, "... tastes like a flat-soda version..." it even looks like the window version lost its legs. The original has a thick syrupy cling to the glass, but the window version sloshes around like water. That's pretty neat!

I recently started drinking a couple months ago. I use to smoke weed cus I lived in Oregon. I use to have an alcohol problem but not like what your thinkin. The smell of beer and alcohol in general use to gag me. And if i try to drink beer or alcohol in general it would come right back up. Right now all I know I can drink 100% and I enjoy it is Jameson. Any other whiskey recommendations? I would greatly appreciate it but I also don’t mind just drinkin Jameson.

the issue here is, so many shops like the nearest supermarket to where i live, the front of it is completely glass and the drinks lnae is at the front, so on a sunny day, all of the drinks will be exposed to Sunlight, So depending on how long they are their on the shelves, they could be exposed for weeks.

I once got incredibly excited when I found a rare bottle of Glenmorangie Madiera wood finish in a shop in Dublin. Only problem was that it was out of its tube, indoors and in the sunlight. It was completely undrinkable.

Had bottles facing the window for over a year and two of them had mold/black/green stuff on the bottle of two of them. Also had some cheap moonshine and it had gunk alllll up in it.

I wonder if the spectrophotometer testing was done with a Scotch with E150a? UV light tends to break apart polymers, and apparently it's the polymerization that gives caramel its color. Which might also explain why, in your tests, the bourbon lost so much color - caramel polymers from wood sugars.

You may also want to consider heat effects. The bourbon is darker and will also convert more of the infrared into heat. I wonder if you controlled the temperature of the samples if it would reduce the effects on the bourbon to be more like the Irish or Scotch samples.

would be really interesting to run proper analyses on these to see the various component changes, UV light is a really potent chemical catalyst, and also very efficient at breaking apart polymers. a HPLC analysis might give a good reading, as i think there are to many polymer and compounds for a AAS.

I was wondering about this when I seen Total Wine has skylights, one of which is above the whiskey section, giving a few hours of direct sunlight on it's bottles. I guess it's not a smart way to stock the whiskeys.

I doubt it's an issue. For one, Total Wine doesn't open stores in slow markets. Bottles that don't move units in 200 days are going to be discontinued. Second, there's going to be a big difference in the intensity of light directly next to a clear window and the indirect light 20 feet away from a frosted skylight. Also, in addition to the light, you've got radiant heat to deal with when the bottle is inches away from the glass which won't be an issue in a store.

interesting, that the Scots and Irish made their Whiskey more Sun proof, given that they rarely ever have any... I would have expected the Burbon to perform better in that regard.

It is the UV that causes the damage. So, as long as you're not using like grow op lights, you'll be fine lol.

Lights can't do the whisky any good...but would be somewhat interesting to see. I'd imagine heat to have more of an effect than non-UV light. I made a separate comment asking for a heat test which I reckon mostly covers this too.

oh man. I went to a gas station in Illinois with an entire shelf rack in direct sunlight in a glass storefront on the south side of the store. Judging by the dust on the bottles they have been there a long, long time. If your willing to try it let me know I'll send a bottle.

There's a high end wine and whiskey store near me that has a window shining on their shelf of Mac Ms and other high end whiskies. For YEARS. Is the window UV protected? Maybe. But its such a stupid risk to take

What about LED lights? Not UV lights but regular cabinet lighting led strips? I keep my bottles socked if they are important to me and especially if they are in clear glass. Am I being over protective? There's NO sun in the cabinet, just the LEDs.

I've noticed sun degradation in other aged spirits like rum, brandy & even tequila. A buddy had to rework his whole storage after losing hundreds to the sun.

I have a time traveler theory. With a little futurama. Fancy Dan was frozen in the 80’s in the hipe of the surrfer craze and unfrozen 3 years later.. and there you go!! LOL

would be nice to see an experiment on how different colours of glass as well as boxes and cilinders help protect the whiskey. I expecy white cilinders/boxes tobe most effective, as a white and light colours reflect (most) light away, whereas black and dark colour can result in light being absorbed and turned into heat (that's why white/light coloured clothing is often preferable over black/dark coloured clothing on a sunny day)

Depends what you're thinking here, black is black because it's absorbing the most wavelengths of VISIBLE light. You'd need to do an experiment to find out what wavelength is causing the most damage to know what color of bottle would protect the spirit the most. So while white may help it not absorb heat its also reflecting all the wavelengths of VISIBLE away. The question is if that is better than a bottle that would absorb most or if it's the non-visible spectrum of light that is causing the problems and if those are absorbed.

@@Slaughter0tter I was talking about a box or cilinder surrounding the tube, so no light whatsoever should reach the bottle/whiskey in that case, but the colour can change how much light is reflected vs absorbed and turned into heat (which is passed on to the inside of the container and thus to the bottle and whiskey). You are right for bringing up visible Vs invisible (UV and infrared) light, as it is possible for things to still absorb those even if those things seem white to our eyes.

I would be interested in seeing if the same thing will happen if you use a UV blocking film on the glass to remove the remaining UV-A light that gets through, to confirm it is the UV light that does the damage. And then leave some outdoors in the winter so it gets the full UV-A, B and C light.

It *IS* the UV that does the damage. And many liquor stores have UV film on their windows, or almost no windows. That said, fluorescent and recessed (often halogen, with nearly sunlight UV frequencies) lights are basically the same thing. I'd put a second layer on the cabinet glass as well to deal with interior lights. This is why more and more good alcohol has recently been coming in a cardboard tube or a small box. 1-2 mm of paper is all it takes to solve the issue entirely.

I get rubbery and chemical flavors and aromas from islay scotch to begin with, but it is good to know that my distaste of storing my liquor in direct sunlight has some foundation in science

A local liquor store has floor to ceiling windows as the front of their store. Should I avoid their whiskey if it is shelved maybe 20 feet from these windows?

Depends on the store but where I am I doubt the front most bottle of any whiskey lasts more than a week on the shelf and anything really expensive comes in a box or is stored in special displays (even clear perspex is going to block a few more UV rays)

BIG IDEA. Give me credit if you make this video. But Can you guys test this with clear bottles of spirits? Preferably ones with more flavor? I’d love to see like a flavored vodka in a clear bottle and see what the taste difference is I had construction done on my kitchen windows (No blinds for days) and exposed a lot of my clear bottles to a lot of light for many days. I noticed on my blueberry and cherry they’re not quite fruity anymore? Idk how to explain it. But I’m not entirely convinced it was the sun. Would you guys be willing to test this?

A lot of house windows block a lot of UV light, I wonder if there'd be a major difference if it was outside rather than inside

Outside will kill alcohol in as little as a few hours, especially as the bottle soaks in heat. Outside in direct sunlight is roughly 50-100x the UV in most cases. Glass does block most UVB, but does almost nothing for UVA. A smart shop (such as their own tasting room?) should install uv blocking film on all of the windows as UVA is the main culprit here and glass only blocks a few percent of that frequency. It will also lower the heat in the room by about 5 degrees, which is a nice plus. Most liquor stores of note do put this film on the windows - you can see a slight silvery/iridescent sheen at certain angles.

So I may have missed it, is the partial/windowed one, does it have UV coating on it? I always figured it was the UV that killed spirits. Anywho, I like these series. I know not keep it out of light for extended periods, and don’t put it in the freezer.

Based on the shot, it looks like a garage/warehouse type setup and is just single thickness glass. Your average home's windows. I see no sheen or color shifting that indicates a film, and you'd not use one in most construction like that.

@@plektosgaming that’s what I thought, not UV coated. Like some of the other comments have said, a lot of bars out their bottle up by windows. I’ve seen the same setup, but in newer places with newer double sided UV windows. Either way, no matter what, my whiskey stay in cool dark places 😂

@@madjinxify A fridge is perfect for beer and whiskey. Wine is trickier, but most residential fridges aren't cold enough to cause any sort of problem. I know.. it's the culture. We want to look at it, but there's plenty of time to see it in the glass :)

My hypothesis for what happens to whiskey in sunlight is this: UV light tends to break chemical bonds, particularly complex molecules with double bonds. When these bonds break, they make smaller molecules with lower boiling points. This might make the whiskey smell or taste like it has more heads in it (more solventy). I've never tasted sunstruck whiskey though so I could be wrong.

Hard direct UV radiation is simply bad for anything organic. It doesn't cause cancer and ages you like crazy for no reason. It bleaches and destroys organic compounds that's why sunlight eventually turns everything white and is a great disinfectant.

Ethyl acetate has both nail polish remover and fruity notes. Bet you're getting lots of that, after sunlight oxidizes the caramely congeners there will be free radicals in solution to oxidize the ethanol into acetic acid. Then it's an easy esterification to get ethyl acetate from acetic acid and ethanol.
