3 medium eggplant (aubergine)
1 onion
1 medium carrot
400ml | 14fl oz passata
2tsp cumin
1tsp smoked paprika
pinch cinnamon
1/2tsp cayenne pepper
salt and black pepper
1/2 cup | 120ml | 4fl oz vegetable stock
100g | 3.5oz dry quinoa
3/4 cup | 120g | 4.5oz cooked chickpeas
1/4 cup |35g raisins
2tbsp fresh parsley
vegetable oil
